Crock Pot, Soup, and Stew Recipes
Now that fall is upon us and winter is just around the corner I thought I'd ask some of you mama's to share your favorite crock pot, stew or homemade soup recipes. I'm not the best cook, but I love trying new things and getting new ideas. I look forward to hearing from everyone. :)

Look for the Fix It and Forget It cookbooks. They are crockpot recipes and have tons of recipes for soups, stews, chilis, etc. A lot of the recipes are very simple (just dump in the ingrediants) and they are all really good. I use mine all the time in the winter.

One of the ways to short cut is to use whole canned potatoes. no peeling, no fuss. just drain and throw in the crockpot with a roast, a bag of baby carrots, and a can of cream of mushroom soup. add beef broth for liquid and you have a whole meal in a crock pot ready for you when you get home. these potatoes dont get mushy at all.

Here are two of my family's favorites:
Steak 'n' Gravy
1 pound round steak, trimmed and cut into bite size pieces
1 tablespoon oil
1 1/2 cup water
1 can (8 ounces) tomato sauce
1 teaspoon ground cumin
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons all-purpose flour
1/4 cup cold water
hot cooked rice or egg noodles
Brown beef in oil. Transfer to slow cooker and cover with water, tomato sauce, and seasonings. Cover and cook on low for 8 hours. In small bowl combine the flour with the cold water to make a paste. Stir it into the slow cooker. Cover and cook on high about 30 minutes or until gravy has thickened. Serve over cooked rice or pasta. Serves 4
Pumpkin Pie Pudding (tastes like pumpkin pie)
1 can (15 ounces) solid pack pumpkin
1 can (12 ounces) evaporated milk
3/4 cup sugar
1/2 cup biscuit/baking mix
2 eggs, beaten
2 tablespoons butter or margarine, melted
2 1/2 teaspoons pumpkin pie spice
2 teaspoons vanilla extract
whipped topping, optional
In a large bowl, combine the first eight ingredients. Transfer to a slow cooker that's been coated with nonstick cooking spray. Cover and cook on low for 6-7 hours or until a thermometer reads 160*. Serve in bowls with whipped topping, if desired. Serves 6-8

One of my family favorites:
1 beef roast - any type or size
1 envelope dry onion soup mix
1 can cream of mushroom soup
Put the roast into a slow cooker, top with onion soup mix and cream of mushroom soup. Cook on low approx. 8 hours.
The longer you cook it, the more tender it will be.
We like to shred it and use it as a sandwich meat, but you can also just slice it and eat it as a pot roast.
This is a great start it in the morning and leave it until dinner recipe.

BBQ Pork- pork roast in crock pot, add 1 cup water for each pound of roast. Add a couple beef boullion cubes. Cook on low all day. Drain water, remove fat, shred meat and mix with BBQ sauce. Serve on buns
Italian Beef- beef roast in crock pot with water and a package of Good Seasons Italian dressing mix. Cook on low all day. Drain water, remove fat, shred meat and serve on buns.
Slow cooker lasagna- use your regular recipe but don't cook the noodles. Mix 1/4 cup water with your sauce, put some sauce in crock pot first, a layer of uncooked noodles- break them to fit the pot, layer of sauce, layer of meat and cheese, layer of sauce- noodles- sauce and so on. Make sure your noodles have sauce on the top and bottom so when they cook, they soak up the liquid and soften. Top with cheese cook on low all day.

One of my family favorites - Stew
Need: Stew meat, potatoes, baby carrots, celery, onion, jar of heinz beef gravy and any other vegies you may like.
Stew meat (you can either buy a roast and cut up or already cut up stew meat at the store)and place at bottom of crock pot.
Wash baby carrots and dump bag in (you can cut in half if you like - that's just extra work though :o))
Celery - cut up in small chunks as much or as little as your family would like.
Onion - Cut up one fairly good size onion in "chunks" and dump on top of carrots/celery.
If you are adding any other veggies - such as peas,green beans, ? I would add now.
Potatoes - peel and leave whole - put on top (potatoes cook faster and if you cut up now - they could possibly turn to mush)
Dump jar of gravy on top - then add a little water to jar (about 1/3) swirl to get rest of gravy and dump in - keep your jar - you will need later.
Cover and cook (depends on what setting you put on - if you put on high it takes about 2 1/2 - 3 hours) You can tell when done if the carrots are soft.
Once it appears it is "done" cut potatoes in 1/2 or 1/3's depending on how "chunky" you like them. Add abou 2 tbs of flour to the gravy jar - add COLD water so the jar is about 1/2 full - swirl until mixed up and add to stew - Let stew set for about an additional 15minutes - this will thicken up the gravy part.
Salt/Pepper to taste - I usually let each person just add to their own bowls of stew. I like mine salty - my husband not at all.
I understand about the go, go - I also work a full time job and run a part time party plan/direct sales business (www.snowflakegems.com). I have 3 busy girls and husband who works a full time 2nd shift job.
The stew is actually very easy - peeling potatoes is the most time consuming - otherwise everything else - I just use the "dump it in" method.

Cheesy Ham & Potato Soup
3 medium diced potatoes or
l bag Simply Potatoes Diced Potatoes with onion
2 cups chicken stock
l sweet yellow onion, small diced
3 Tbsp. butter
3 Tbsp. flour
l l/2 cups milk
l 1/2 cups half and half
2 cups shredded cheddar cheese
2 cups cooked diced ham
Salt and freshly ground pepper,
to taste
Bring 2 cups chicken stock to a boil;
add potatoes and cook until tender, and set aside.
Melt 3 Tbsp butter in a medium saucepan over medium heat.
Sauté chopped onion in the hot butter until tender.
Add 3 Tbsp flour to butter and onion mixture; stir until smooth.
Season with a little salt and pepper;
continue to cook and stir for 1 minute.
Gradually add potatoes and cooking liquid, and milk. Stir well;
Add cheese and ham. Simmer potato ham soup over low heat, stirring frequently, for about
20 minutes. Serve with crusty bread on the side. Serves 6 to 8.
Chicken Tortilla Soup
1 lb. Chicken Breast (cooked and cubed)
1 can Nacho Cheese (or Cheddar) soup
1 can Cream of Chicken soup
1 soup can milk
1 can Enchilada Sauce
Combine all ingredients, bring to a boil over low heat, stirring constantly. Top with crushed tortilla chips and shredded cheese.
It's that easy!
Nacho Potato Soup
1 pkg. (5 ¼oz) augratin potatoes
1 can (11 oz) whole kernel corn, drained
1 can (10 oz) diced tomatoes and green chilies, undrained
2 cups water
2 cups milk
2 cups cubed process American cheese
Dash hot pepper sauce, optional
Minced fresh parsley, optional
In a 3 qt. Saucepan, combine the contents of the potato package, corn, tomatoes and water; mix well. Bring to a boil. Reduce heat; cover and simmer for 15- 18 minutes or until potatoes are tender. Add milk, cheese and hot pepper sauce if desired; cook and stir until the cheese is melted. Garnish with parlsey if desired. Yield - 6-8 servings (2 quarts).
