Places to Stop Between Dallas and Corpus Christi

I am planning to take my 7 year old daughter on a road trip to Port Aransas later this month to meet some friends. We are planning to stop overnight somewhere along the way - most likely Austin or San Antonio - so we don't do the entire drive in one day.

I have been to Austin and San Antonio many times, but I haven't made stops other than going to places along the freeway to get gas and lunch. I would like to map out a fun "adventure" to break up the drive for my daughter and wondered if there are any "not-to-be-missed" quick stops (taking an hour or less) from at least 90 minutes south of Dallas on 35 all the way to Corpus Christi that we should explore like farms, historical markers, shops, towns. Basically I'm looking for lesser known things to do/places to visit that we should explore that you would recommend for a child.

So What Happened?

Thank you! I had never heard of Salado before. I think we'll stop at Noah's Way exotic petting zoo in Salado. I will also look into the caves. I remember seeing them in the past, but haven't been. I also got several books at the library about off-beat things to do so I plan to go through them. Thank you for the replies.

The caves near San Antonio are lots of fun, plus they have an area where you can rinse bags of dirt with arrow heads and special stones in them. You purchase the bags there and they are all guaranteed to have certain objects mixed in. I believe the term is sleucing sp?(you put the dirt in a screened box and water runs through it to wash the dirt away.) Everything you need to do it is right there. My kids loved doing this for years and had more fun with it than the caves themselves. This is also near a drive through animal park -probably too hot for that to be enjoyable this summer.
Another fun activity is Aquarena Springs in San Marcos. It's right off the interstate and has glass bottom boat rides. They run fairly often, aren't too expensive and are a fun/different thing to do. We have taken our kids and niece and nephew there.
San Antonio also has an awesome children's museum. Have fun!

You could stop by New Braunfels. They have some caves that are really cool & don't take long.

We did the caverns just north of San Antonio and my 5 and 8 yr olds loved it. They even had a zipline you can do. There is also the Dr Pepper museum in Waco, we wanted to stop but didn't have time.
