New Low-Carb Recipes PLEASE!

Hubby and I are sooo bored. We don't eat processed Carbs at all and limite our natural carbs as well. I am so bored with the same ol meat and veg...I need some new ideas! Anyone out there got a great recipe that they love?

Please note: I am an extremely busy working mamma in the middle of wrestling season (hubby coaches), so time is limited this time of year! :)

One of my favs is to dip chicken breast in egg, then parmesan cheese. Lightly fry it in a pan to set the crust. Then bake it for a while. At the last few minutes put provolone cheese over each piece. Once out of the oven, top with a bit of tomato sauce or spaghetti sauce.

My husband got me a subscription for Vegetarian Times and I have gotten some good ideas from them. I am not a vegetarian but do love veggies, and they have lots of good ideas that pair well with meat. Check out their website or pick up a magazine :)

Try making some split pea and ham soup or some bean soup with ham. I don't actually have a recipe, but I start with vegetable or beef broth, soak the beans overnight first then put them in a big pot with the broth, add chopped carrots, celery, onion, garlic, one potato chopped, and about 1/2 lb of ham. The legums are high in protein and a "good" carb with a low glycemic value. If beans give you a problem try Beano...I usually take more than the recommended amount and I don't have a problem with beans.

I just tried the following . . . it was good and creamy. I had to add some spice to it as it was a bit bland.

Shirataki Shrimp Fettuccine
Makes one serving
1 package tofu shirataki fettuccine shaped noodle substitute
1 tsp reduced fat sour cream
1 wedge spreadable light Swiss cheese
1/2 cup frozen broccoli florets, thawed
1/2 cup chopped spinach
3 oz. frozen ready-to-eat medium shrimp, thawed
2 tsp reduced-fat parmesan-style grated topping
Optional seasonings: salt, black pepper

Directions
Use a strainer to rinse and drain noodles. Thoroughly pat dry. Roughly cut noodles.

Bring a skillet sprayed with nonstick spray to medium heat. Add noodles, sour cream, and cheese wedge, breaking the wedge into pieces. Cook and stir until cheese has melted, mixed with sour cream, and coated noodles.

Stir in broccoli, shrimp, spinach and parmesan-style topping. Cook and stir until hot, 2 to 3 minutes. Enjoy!

Homemade Sloppy Joe
1lb Ground Meat

Brown meat and add the following:
1/2 cup diced Red Pepper
1/2 cup diced yellow onion
1/2 cup diced mushroom
1/2 cup diced celery

Let cook together for a short time and then add the following:
1/2 cup catsup
1/2 cup water
1/4 cup chili sauce
1 tsp Worcestershire Sauce
