i have been using ground turkey occasionally instead of ground beef. i was wondering if any of you mamas have good HEALTHY recipes where you used lean ground turkey. thanks moms!!

We use ground turkey more than ground beef. Sometimes I will also ground up chicken breasts using my food processor too.

Favorite recipes are:
Meatloaf
2 lbs. ground turkey or ground chicken
1 15 oz. can of tomato sauce (I use the no salt added)or 2 C of marinara (depends if I have any of this made already)
2 egg whites
1/2 C shredded Romano cheese
1/2 C plain dried bread crumbs
1/2 t salt
1 small onion sauteed in water (optional)

Preheat the oven to 400 degrees. Line a 13"x9" pan with foil and spray foil with nonstick cooking spray.

In a bowl mix all of the ingredients except the chicken, 1/2 C of the marinara and the onion. In saucepan, saute the onion in water (or nonstick cooking spray if necessary). Mix in the onion thoroughly and then add in the chicken. Mix just until the chicken is combined with the other ingredients.

Form the meat into a meatloaf into a loaf in the pan and then pour the remaining 1/2 C of the marinara along the top. I also sometimes will garnish with a little more Romano cheese for presentation.

Bake in the oven for 1 hour and 5 or 10 minutes. You want the internal meat temperature to read at 165 degrees.

Turkey burgers
2 lbs. ground lean turkey
1 package of Lipton's Onion Soup Mix
Blend all together and either broil, grill, or pan fry in a nonstick cooking spray for the appropriate amount of time to reach 165 degrees internally in the meat. Makes about 8 patties and is really good.

Turkey (or Chicken) Chili
2- 2-Alarm Chili Mix Packages
1 serrano pepper (diced)
1 large jalapeno (diced)- (take out seeds if you want milder)
1 small white or yellow onion (diced)
1 clove minced garlic
4 lbs. lean ground turkey

Brown the meat in a pan. Don't forget to spray the bottom of the pan with nonstick cooking spray first.

In a separate saute pan, saute the peppers, pnion, and garlic. I just add about 1/4 C to 1/2 C of water to the mixture to keep it from sticking to the pan but no oil is needed.

Drain the fat from the meat before you put in the peppers, onion, and garlic mixture as these ingredients aren't on the chili mixture instruction box. Follow the rest of the 2-Alarm chili mixture prep. to complete the recipe.

My husband likes his chili on a bed of white rice but I like mine with just a little shredded cheese. The recipe I provided above is doubled as I make a big pot so he can take for lunch throughout the week and it actually gets better with age.

Hi. I pretty much use ground turkey all the time instead of beef. We have come to prefer it. One of my family's favorite meals is chili made with ground turkey. If the kids will be eating it, I buy Wick Fowlers False Alarm Chili kit, and my husband, who likes spicy food, just adds hot sauce to it to spice it up. If its just for adults, I buy the 2 alarm chili kit. Very good, even better the next day.

Spaghetti with turkey meat sauce is easy.

Instead of regular meat loaf, make it with turkey.

Tacos are great too.

This is so yummy and is always a huge hit! It is from Cooking Light magazine. I use a package of ground turkey breast and I don't put the whole green chiles on the bottom of the baking dish. Enjoy!

La Bamba Casserole

1 (5.25-ounce) can whole green chiles, drained
Cooking spray
1 pound ground turkey breast
1 cup chopped onion
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 garlic cloves, minced
1 (10-ounce) can diced tomatoes and green chiles, undrained (Rotel)
2 cups frozen whole-kernel corn, thawed (I use 1 can white corn)
1 (16-ounce) can fat-free refried beans (I use the vegetarian ones)
1 1/2 cups (6 ounces) shredded cheddar cheese
1 cup chopped tomato
1/2 cup chopped green onions

Preheat oven to 375°.

Cut green chiles in half lengthwise. Arrange chiles in a single layer in an 8-inch square baking dish coated with cooking spray.

Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add turkey, onion, chili powder, cumin, salt, and garlic; sauté 5 minutes, stirring to crumble. Add diced tomatoes; cook 5 minutes or until liquid evaporates.

Spoon turkey mixture over chiles. Top with corn. Carefully spread beans over corn. Sprinkle cheese over beans. Bake at 375° for 30 minutes. Let stand 5 minutes; top with chopped tomato and green onions.

Yield: 6 servings (serving size: 1 1/3 cups)

I haven't tried this yet but my friend uses a 1lb of ground turkey and 1 lb of chicken sausage you can get at Sprouts or Whole foods and then she just follows the recipe on the back of the Meatloaf seasoning packet. I use mild picante sauce instead of cutting up the veggies and instead of bread crumbs I tear up wheat bread. She says its very light and doesn't leave you feeling so feel like ground beef does.. Hope this helps.. I make enchiladas with my ground turkey. They are better for you but not that healthy. I use 2% cheese and low fat sour cream. If you want the recipe I will send it to you.

I like to make tacos using the ground turkey. Just do it exactly like you would with ground beef. The first time I made them my husband and son had no idea it was turkey. They love it.
