Need Help with Idea for Cake with No Eggs & Activity for 2 Yr Old B-day Party

First, I have a daughter who is extremely allergic to eggs. Does anyone know of a bakery who could make one, or a recipe where I could make it??

Also, her party will be next month, and there will be about 6 kids there. The party will be at the house, weather will likely be cold, any suggestions for a couple of activities would be GREATLY appreciated!!

Hi! You can make a cake without eggs by just using what's called an 'egg replacer' - you can find it in the health food section of your grocer. But even that isn't necessary. Here's a trick I've used with success: put an extra tsp. of baking soda and an extra 1/2 or 1 tsp of baking powder in the batter. That's it! Eggs are only for 'binding' ingredients together when it comes to cakes. Other people have used a few tsps of ground flax too.

As for activities: Keep it simple! 2 year olds have very short attention spans. I would keep the party no more than 1 1/2 to 2 hours long. You can do a theme regarding fall, thanksgiving, or something special about her personality or name meaning. Then organize things around that theme. A good rundown for the party would be to have an activity such as a VERY simple coloring page or craft according to your theme when guests arrive. Go straight into cake. After cleaning up from that go straight into gift opening. Then do one of those pinatas that the kids pull the strings. Have only something like fruit juice sweetened fruit leathers for the 'goodies' inside the pinata. At that point a 2 year old will be saturated... let them play a game of bean bag toss or something until its time to go home.

You can use just about any storebought cake mix that is egg-free and substitute Ener-g egg replacer or Bobs Old Red mill egg-replacer (both can be found at Sprouts or Whole Foods) or you can use 1 tablespoon oil + 2 tablespoons water + 1 tsp baking power (mix the 3 together first). Cherry brook kitchens makes a dairy/egg/peanut free line of cake mixes - I have found those at Sprouts, Whole Foods, Kroger, Albertsons and even a few times at Walmart.

If she has a severe allergy, I'm sure you would feel better about baking the cake yourself. (I'm the same way w/ my son...)
Here's a recipe that's tried & true, yummy & not too sweet:

Easy Chocolate No-No Cake / Vegan Cake
(no eggs, no milk added; each recipe makes one "layer")

Ingredients:
· 1 1/2 c flour
· 1/3 c natural (i.e. not Dutch-processed) cocoa powder (though if it’s what you have, it’s not really necessary to buy more; the difference is noticeable to me, but no one else in my family!)
· 1 tsp baking soda
· 1/2 tsp salt (heaping)
· 1 c granulated sugar
· 1/2 c vegetable oil (I use avocado oil or olive oil; the olive oil flavor comes through as a little more of a “grown-up” choc. cake, but I like it; you can use canola oil, coconut oil, or almond oil if you prefer, too)
· 1 c cold water
· 2 tsp pure vanilla extract
· 2 tsp white vinegar
· powdered sugar for topping, optional (not necessarily vegan, depending on brand of powdered sugar)
Preheat oven to 375 degrees F. Use a small, round cake pan (I use a 9”); no greasing required, but a quick spray doesn’t hurt. Mix all dry ingredients right in the pan. Mix all wet ingredients in separate bowl EXCEPT VINEGAR (important!). Add wet ingredients to the dry and stir until JUST MIXED (overmixing makes it tough). Add vinegar quickly and stir in -- immediately put in oven and bake for 25 to 30 min.
When cooled, a pretty sprinkle of powdered sugar tops it nicely. You can cut out a simple design (large flower, balloons, or maybe a butterfly?) in paper, lay it across the top of the cooled cake, & sprinkle the powdered sugar over it; remove the paper & the design is on the cake in sugar - very cute! (I've used doilies, cut-outs, and even -in a pinch- a wire cooling rack to make designs...) ;P

Oh - and an activity for a 2 yr old b-day party? Nothing too structured, bubbles? play-doh? dance time/jam time (listen to a fun cd & make instruments to play)?
