Looking for a Fantastic Cupcake Recipe

Does anyone have a great white or yellow cake cupcake recipe? I'm thinking about hosting a kids decorate-a-cupcake party and in case there are any left (HA!), I want to LOVE what I'd help polish off!

I don't have a cake recipe, but made the most awesome icing over the weekend!

1 1/2 sticks butter (I used 1 stix marg & 1/2 stix butter). Beat til creamy.
1/2 jar marshmallow creme. Add to creamed butter & mix thoroughly.
Add <3 cups powdered sugar. Beat til spreading consistency.

No milk, no vanilla. You can easily add food coloring & a little bit more powd. sugar to tint the icing! The flavor is not icky sweet, is creamy, & tastes dreamy. My family loved it!

I know this sounds ridiculous, but it works and is SUPER good. Take any flavor cake mix you like and add one can of pop to it and NOTHING else. If it is a dark colored mix add any flavor (including Diet Coke to take out the sugar). You can add flavored soda to change the taste, too (ie. cherry to chocolate). If a light mix is used, use a light colored soda (sprite). One suggestion is orange pop to white or yellow cake mix.

We now make all our cakes and cupcakes this way. They are super good and VERY moist. Just the mix and one can of pop. No oil, no eggs, no water......less fat! I think it was a Weight Watchers recipe. I didn't believe it until I did it. :)

We have learned tricks from the "Cake doctor"..

Use boxed cake mix and add 2 egg yolks per egg in a recipe.. throw out the whites..

For white cake mix add a tsp of vanilla extract.

Add a little bit of salt to chocolate cake mix.

You can add a little coconut extract in a milk chocolate cake mix.

There is a children's picture book called "Cupcake" by Charise Mericle Harper with an unbelievable vanilla cupcake recipe in the back. Sounds blahh and plain, but the simplicity makes them delicious. I've been trying to find the recipe online, but so far no luck. Check your local library for the book!

Reading these responses makes me hungry! :) the best trick I have is to pop a fun size (the smallest one not Halloween variety) milky way into each cupcake before baking. It melts perfectly and tastes so good! And always bake for the lowest time listed, if it says 20-22, do 20. Unless your oven is tricky, this always works best for me to avoid dryness. Have a fun party!
