Leftover Crock Pot Chicken Recipies

I'm a huge fan of allrecipies.com, but I don't know if that site can help today. I made a chicken in the crock pot yesterday, and there's still a lot of chicken left on the bone. Does anyone have a quick recipe using pulled chicken? Last night's dinner was the chicken with carrots and potatoes with a lot of broth, so it was already pretty soupy (even though this cold weather calls for more soup!). Maybe sandwiches or an easy casserole? Thanks!

You can make a chicken salad or a barbeque chicken for sandwiches. Try doing an ingredients search on allrecipes.com for cooked chicken recipes or a google search. What I love when I find these recipes is that most of them take under 30 minutes.

You could make a pot pie with the chicken and the leftover veggies if there are any. Cut the chicken up and mix with the potatoes and carrots - you can add a can of diced potatoes if you don't have enough and/or frozen veggies of any kind. Add a can of cream of chicken soup and maybe some salt and pepper. You can use refrigerated pie crusts - one on the bottom, put the stuff inside, and put the other crust on top with slits in the top. Bake at 425 for about 40 minutes. Super easy and really yummy. You can use this with leftover pot roast as well, using cream of mushroom soup instead of the cream of chicken.

I buy the bone-in chicken when it's on sale and cook it in the crockpot just so I can shred or chunk it, then freeze it in family portions. I use it for chinese chicken salad, chicken echiliadas (super easy and they freeze well)chicken cesar salad, and the recipes the others have mentioned. For nights we have horses, I make up rice, put some of the chicken on it, add some peas and heat it in the microwave at the barn for the kids to eat in the car on the way home. I also add salt and butter to it.....they inhale it. Allrecipes.com lets you search by ingredient.

I use cooked chicken and make a yummy chicken broccoli casserole.

My recipe calls for about 4 chicken breasts so I am not sure if you have enough chicken for that recipe. If you want it let me know.

A friend of mine shreds it and puts it on tortillas.

I can't find the recipe she uses for sauce (it has sour cream, jalapenos and lime juice), but I've tried the same thing with different sauces and that is good too (my kids like ranch)

Then she puts avacado, tomatoes, etc on it, it's yummy!! This is one of the few things my kids will eat tomato on!!
