What are your favorite breakfasts for a hot, humid summer morning? My kids love pancakes, but it makes the kitchen so hot...do you have any favorites?

SMOOTHIES!

**Frozen Strawberry Slush**

Though not a smoothie, this is a summer refreshing favorite.

Ingredients:

4 cups ice

4 cups frozen strawberries

Using a blender mix all ingredients together and serve. This makes a nice cool refreshing and healthy strawberry icee-style drink.

**Strawberry Banana Smoothie**

Ingredients:

3 Bananas

4 cups frozen strawberries

2 cups orange juice

4 cups ice

In blender mix all ingredients together and serve.

**Pineapple Banana Smoothie**

Ingredients:

3 bananas

Small container of orange sherbet

Cup of crushed ice

2 cups pineapple juice

Mix all ingredients in a blender. To add some bubble to it, top off with a splash of Fresca or Sprite.

My kids eat yogurt with frozen berries and smoothies. They also like bagels with flavored cream cheese. I also have made freezer waffles in the toaster and then put cream cheese in the middle between 2 waffles and make a sandwich out of it. Hope you get some good ideas. Good luck!

Cold cereal, my guy loves Frosted Mini Wheats, I save money and buy the generic and it tastes the same : ) And his whole wheat toast, dry, lol. I offer peanut butter or a dab of jelly, nope, he wants nothing. Oh, and sausage patties you pop in the microwave for 1 minute, he loves those with his dry toast and milk. Yogurt and cut up apples, strawberries, whatever your fave fruits are, layered in a cup topped with some crushed cereal or granola. All are easy to fix in the heat.

And, have you tried making pancakes when it's cooler and freezing them? You just pop them in the microwave in the morning like the Eggo or other brands in the frozen section of the supermarket and the kids have their pancakes. I make pancakes for dinner sometimes and put the extras I purposely make in the freezer for an easy, surprise breakfast treat, I have fibromyalgia and have to think creatively ; ) Just cool the pancakes completely, place on parchment paper on a cookie/baking sheet, cover with foil, or parchment, freeze for at least 3 hours, then wrap in waxed paper or parchment paper and seal tightly in a ziplock bag or container in the freezer. To reheat, arrange two pancakes in a stack on a microwave-safe plate. Heat on ‘High’ for 70 seconds. Check the temperature, you may need to heat them for a few more seconds, but don’t overcook them or they’ll get tough, just like the store-bought ones.

You can make boiled eggs and keep them in the fridge.

Purchase precooked bacon or microwave bacon.. Then in the morning make bacon and egg sandwiches,

Fresh fruit and yogurt.

Smoothies

Cold cereal

We purchase baked goods (day old and they are 1/2 price!)

Yogurt, cottage cheese, cereal, fruit, smoothies, cheese sticks, granola/cereal bars, sandwiches, wraps, salads, veggies/dip, basically anything that doesn't need to be heated up.
Or you can zap some leftovers in the microwave. That's what I had this morning, a bowl of last night's spaghetti!

If you have a grill do yourself a favor and buy a griddle to fit over it. Our weekend breakfast menu never changes just where we cook it. :)

L.,
I make little mini muffins the evening/night before, like I did tonight, then we have those and yogurt or cottage cheese and fresh fruit. Scrambled eggs are pretty fast so the stove isn't on too long. I like to put sauteed onions and bell peppers in mine and toss in some diced tomatoes (with the juice drained off) at the last second; my way of sneaking in some veggies too.

Stay cool,
S.

I ditto all the suggestions below! We have been eating alot of cold cereal with milk and fruit on the side, smoothies, or yogurt with fruit and granola, scrambled eggs and toast or bagels, and premade (homemade and then frozen) waffles or pancakes heated back up in the toaster or the microwave.

I also saw a neat idea on Pinterest the other day - waffle cone ice cream cones, but filled with a parfait style mix of berries, greek yogurt, honey and granola!!!! I bought the stuff to make these today at the store.

Also dont forget you can make rolled oats or steel cut oats in the crockpot overnight, and then eat them in the morning with fruit, honey, syrup, nuts, and/or cinnamon stirred in.
