Here's one of my favorites for a Dutch Puffed Apple Pancake (be forewarned, it's very very rich!):

1/4 cup butter
2 apples, peeled, cored, and sliced thin
1/2 cup chopped walnuts
4 large eggs
1 cup milk
2/3 cup flour
2 tbsp. sugar
1 tsp. vanilla
1/4 tsp. ground cinnamon
1/8 tsp. salt
vegetable oil spray
3 tbsp. brown sugar
Maple syrup

Preheat oven to 425. Melt butter in a 9" glass pie dish. Arrange apple pieces over butter. Sprinkle walnuts on top. Bake 5 minutes. Beat eggs, milk, flour, sugar, vanilla, cinnamon and salt. Remove pie dish from oven. Spray edges of dish with vegetable oil spray. Pour batter into dish and sprinkle with brown sugar. Bake 25 minutes. Serve immediately with maple syrup.

I have two here--they don't call for huge amts of syrup but they are quite yummy! Check out Yankee Magazine for recipes too. Enjoy!

February Slaw
1½ tsp Dijon mustard
2 tbsp corn oil
3 tbsp cider vinegar
3 tbsp maple syrup
1 small clove garlic, minced
1 tsp salt
¾ cup onion, cut into tiny dice
1 green pepper, cut into matchstick shreds
1 large carrot, shredded
6 cups thinly shredded cabbage, half red & half green

In a large nonreactive bowl*, combine first 6 ingredients, whisking well to mix. Stir in the onion, and let marinate for 10+ minutes.*this makes a huge amt--use a LARGE bowl.

Stir in the rest of the vegetables and again marinate, stirring once or twice, for at least 15 minutes.

Maple Dijon Creamy Dressing
¼ cup extra light olive oil
½ cup salad oil
2 ½ tablespoons Dijon mustard
3 tbsp dark maple syrup
2 tbsp balsamic vinegar
¼ cup half-and-half
dash of salt
1 clove garlic, scored

Whisk together all ingredients except the garlic. Add the garlic and let the dressing sit for at least an hour to allow flavors to develop. (If you like a sharper taste, add a teaspoon more vinegar or mustard). The dressing gets better overnight and keeps for 4 to 5 days.

One of my favorite sites is www.recipesource.com. Is it a massive collection of recipes that people from all over the world sumbit. You can look for recipes by ingredient, catagory, country, or region. It's not a pretty site, but it's very easy to navigate, and some of the best meals I've made I've found on it. Good Luck.

I always go to www.allrecipes.com when I ahve random ingredients and want recipes. There is a "search by ingredient" option where you put in specific things you want the recipie to have (and anything you don't!) It's very easy, but an addictive site. Especially when you realize you didn't take anything out for dinner, and the only things in your cupboard are pineapple chunks, black beans, and rice. Voila! A fantastic recipie pops up, and no one knows you didn't plan it that way. Oh, and it's a FREE site.

I'm sure that you'll get all kinds of suggestions, but an easy one that combines the two I made for dinner tonight. Slice some apples, saute in a little butter, when they get a little soft, pour on a little maple syrup. We had pancakes for dinner and these were a great side! Enjoy.

Last night we had the following for dessert: I peel, core, and slice thick apple rings. Then I dip the apples in pancake batter, fry, and serve with mapple syrup. I am sure you can use a pancake mix, but I make my own batter of just flour, milk, eggs. When I make the apple fritters I add some cinnamon, nutmeg, and/or brown sugar. Sometimes I make it without the syrup and just dust with a powdered sugar.
