I'm craving a creamy chicken dish with carrots and potatoes. I have a can of Campbell's Creamy Potatoe Soup that I would like to use as an ingredient. Do any of you moms have a delicious recipe you would care to share with me? This would just be a dinner for two people. Thanks!

I would go the bacon route in the recipe above. Then, I would try the following:
dice onions and saute in pan with olive oil
add cubed chicken and saute
add some spices - tarragon, dill or celery, white pepper, salt
add any vegetables you may desire
pour in your cream of potato soup once the chicken is cooked through. Heat to desired temperature.

In single serve bowls, add a dollop of the colcannon and then pour your soup/chicken mixture over the top.

I just made a soup last night like this. I cut up 2 potatoes and put them in about 2 cups of boiling water and let them cook while I cut up cooked, leftover chicken. I added about a cup of chicken broth, handful or two of frozen broccoli, a can of cream of chicken soup, a small amount of frozen spinach and a can of peas and carrots(drained and rinsed). I let it simmer for a while. I ate it with some crusty sourdough.

I basically put in things I had already from the freezer and cabinet. It turned out yummy! I have enough for the week.

Hello, You could make a chicken shepard's pie. Bake your chicken. Cook potatoes then mash them. Cook the carrots. Place the cooked carrots in a baking dish, lay the cooked chicken on top, cover that with mashed potatoes, the cream of chicken soup and then layer that with shredded cheese. Place all of this in the oven at 375 degrees for 15 to 20 minutes to melt the cheese. My family always loved this, but I used canned roast beef and drained most of the gravy, then covered it with cream of mushroom soup.

My shepherd's pie is a little different. I mix cream of potato soup, frozen veggies and either canned chicken or cooked chicken cut into chunks, spread it in a 13x9 pan and cover it with mashed potatoes. Either microwave or bake until hot. It's good with ground beef, too.

I always make this when I have leftover mashed potatoes:

take cooked meat (hamburger, sausage, cut up chicken, etc - whatever you have) in a casserole dish. Add some frozen veggies - carrots, corn, peas, etc. Cover with a can of campbells cream of whatever soup (I usually use mushroom) and milk. mix it up. Cover this concoction with mashed potatoes and bake until the inside bubbles up. Or you can microwave it too. Another topping that you can use if you want to cube the potatoes inside the dish is leftover stuffing - that gets crunchy on top. That is one of the comfort food dishes that my mom used to make.
