Crawfish!!

Alright moms and dads, I am doing a crawfish boil this weekend at my son's 2nd birthday party. The kids will have burgers and dogs with a lovely bounce house but for the adults, our entertainment will be the crawfish!! Not being from Louisiana, what tips do you have for me as a first time boiler?? To purge or no? Butter or no???

Boil the crawfish in crab boil it will give them an extra kick and a great smell. Clean them well, lots of rinsing. When the crawfish are done throw in some fresh corn and new potatos to boil in the same water then yum. Serve them in a large platter.Cover the table with news papers so everyone can get messy. Set out a roll of paper towels. Show everyone how to open up the crawfish. Some will be shy because they don't know and won't ask how to eat the crawfish. Go girl sounds like fun.

No butter...you ain't eatin fancy lobsters honey! Get a long table, lay butcher paper down the length of the table, use ready made boiler seasoning instead of making your own, don't forget the red potatoes and corn niblets in the boiler (we do 1 each per person), put out a few rolls of paper towels on the table, plop the crawfish in the middle of the table, don't forget the dump buckets for the shells and heads and chow down!

Oh - this Louisiana born girl says PURGE PURGE PURGE.
We always dumped our live crawfish in a sink (or tub, depending on how many) of tap water to purge them.

Do buy crawfish boil seasoning for the little guys. Follow those directions - you can start off "light" on the seasoning, do a test batch, then adjust from there.

Some things to add - purple potatoes, corn, cloves of garlic. If you add sausage, do it after all the crawfish are cooked or the crawfish wind up all tasting like sausage.

Oh, no butter - that is for lobster. :P

Don't overcook or they get mushy and hard to peel.
Don't eat the ones with straight tales - that means they were dead before they hit the boiling water.

The biggest question left for you to answer - it so suck the heads or not.

YUMMO!! We love crawfish!
To the water we add the liquid and dry seasoning and cut up lemons
We cook the veggies first. We add small red potatoes, corn on the cob, mushrooms, garlic, brussel sprouts and sausage.
Then when that is done, it goes in a cooler. Then we start the crawfish. Then they go in the cooler on top of the veggies.
We only purge if we are not sure how clean they are.

Purge. No butter!

Throw in other veggies along with the corn and potato. You can throw in artichokes, mushrooms, onions, lemons and little smokie sausages.

Offer horseradish, ketchup, Tabasco, mayonnaise and lemon wedges so people can make their own dipping sauces. Be sure to have a lot of beer and make a Bloody Mary punch.

To wash hands for afterwards, offer lemon wedges to squeeze on hands after they wash their hands. It helps with neutralizing the smell on your hands.

def purge!!!! PLEAS PURGE!!! i am not a big fan of crawfish but when people dont bother to purge them its like eating dirt.

have lots of pans and places to put the trash/scraps. and plenty of hand soap for washing up after. have fun sounds like a great party!

Dont forget cut lemons to clean your hands with.
Put a ton of crab boil in the water.
I dust mine with Zatarains or Old Bay before serving. That way your hands get all spicy and red and wonderful. The potatoes cool the fire. Or put it on the side so the wimps don't cry!

My husband boils them and they are great! He purges them. Like Ally said, put some red potatoes and corn in there with them. Butter is up to the person. I like to dip mine in melted butter. So good!! Of course have plenty of paper towels because you will need them. Have fun!!

Whenever I make a new recipe, I google it and then check out the recipes that have 4.5 or 5 stars only. Then I look for the recipes that have comments underneath and read them all. Good luck!
