Hi H.,
There are so many tons of ideas! You can do two different crafts w/this idea:
Use washable paint and make a flower using their handprints as the petals; they can paint the center or you can put an actual pic. of them in the center..just green paint down the pic. for the stem..Also, you can make a fall wreath using brown, orange, red, etc. using the same method w/their hands and just go all around in a circle making the wreath. Try to use white or off-white construction paper if you can. I used to teach pre-school so my mind is flooded w/many ideas! *Pre-schoolers also LOVE glueing anything onto paper; dried peas, shells, dry cereal, even rice or shreds of diff. color paper is exciting and different to them.

At my son's school, the teachers have used family pictures to make placemats that the kids use while they eat. It serves dual purposes - to let the child know where his or her seat is, and to remind them of home and their family while they eat. I like the other ideas also.

A co-worker of mine has a picture of his daughter in a frame made of jigsaw puzzle pieces glued together. At the bottom it says, "I love you to pieces."
It's pretty simply constructed - the picture is glued to a piece of cardboard about 1 1/2 to 2 inches wider than the picture on each side, and the puzzle pieces are glued on around the sides of the picture. It's okay if they overlap each other - in fact, it's cuter if they do. "I love you to pieces" is written across the pieces at the bottom with a Sharpie.
The puzzle pieces are the small-size ones from the 500-piece puzzles. One such puzzle should provide enough pieces for the whole class with plenty to spare.

When my daughter was in preschool I got a booklet about myself using her responses to questions about me. Among other things I learned that I was "very tall" (I'm 5ft. 1") and "17" (try 31!) It was a lot of fun and very cute.

I love the ideas I read here, and wanted to add...

Before you cut any of the pictures, have the children draw their mommies by looking at the pictures. Tell them to look at their arms, legs, etc, and try to get their picture as close as possible. Then you can make something to display both the original pic and their child's drawing. Please, let us know what you decide. It sounds like you are going to have fun!

My son made a paper ornament with colored noodles for Christmas from his day care days - the middle has a picture of him and his father. I still treasure it....

Go to a school supply store (teachers know where they are) and look through some of the books there -- should be lots of craft books and ideas for that level.
