Casserole for a New Mom
I am looking for some quick and easy casseroles to make for my friend who just had her first baby. She is breastfeeding so nothing with spice or vegetables that could cause gas/upset tummy for the baby.

Mexican Chicken
1 c v8 juice
1 t each basil, oregano, chili pdr, dried onion
1/2 t garlic
3 c cooked chicken, cubed or shredded
1 small can green chilis
2 c cottage cheese
1 c cheddar shredded ( I use more)
crushed tortilla chips
mix v8 with spices and simmer.
mix chicken and chilis.
in another bowl mix cheeses together
layer chicken, cheeses, then sauce
sprinkle with chips
bake 350 for 30 min
serves 6 delicious!

Chicken & Rice Casserole
Ingredients:
Boneless skinless Chicken Breast (2-4 breasts)
1 can Cream of chicken soup
1 1/3 cup of water
3/4 cup uncooked regular white long grain rice – or fast cook wild rice
Season to taste – pepper, garlic, etc
Directions:
Mix soup, water, rice and seasoning in a shallow 2 quart baking dish, top with chicken.
Bake at 375 for 45 minutes covered, Remove lid and sprinkle with cheese … bake until cheese is melted
Variation: mix in 2 cups fresh veggies to soup mixture before chicken

Here's a great, easy one my family loves!
It's the Hermanson Shepard's Pie:
Cook one lb. hamburger (I use 93% lean). While burger is cooking-prepare 8 servings instant mashed potatoes. In a round casserole dish--layer hamburger, potatoes, corn and top with 5 or 6 slices yellow american cheese. Voila, instant goodness! Hope it helps and congrats to her!

I recieved this chicken and rice casserole as a MOMS Club meal from another mom and have since made it several times for other new moms. It is super yummy and everyone loves it. VERY easy to make. It is by Paula Dean and can be found on the foodtv website to print the recipe and send with the meal....that way the new mom knows all the ingredients and has the recipe to make in the future. The only item I can imagine would cause the new baby any problems is the cheese, which would only be if the mom is suspecting a dairy sensitivity in the baby.... Good luck and enjoy, it really is YUMMY!

GREEK COMPANY CASSEROLE
Serves 12
Needs to be made an hour or two ahead of time or the day before. Freezes well.
Saute together: 3 lb. ground chuck
1 cup chopped onion
Add: 2 buds minced garlic
1 can tomato soup
3 cans tomato sauce
salt, pepper and basil to taste
While this is simmering cook:
1 lb. wide noodles and drain
Combine: 1 lb. feta cheese
16 ounces cream cheese
½ lb. cottage cheese
½ pt. sour cream
In a large buttered casserole place in layers:
half of the noodles
half of the cheese mixture
other half of the noodles
other half of the cheese mixture
Pour tomato meat sauce over the top
Refrigerate 1 hour or overnight
Bake 350 for one hour

When my son was a new baby
I could not have been more appreciative
for the home made macaroni and cheese I was brought.
The same folks brought by salad
large enough to eat for a few days too.
I had another friend who came by
with ham and cheese.
She put together several sandwiches
which were bagged and stacked in my fridge
and my older child
was schooled in popping them into the toaster oven,
so they'd be warm.
I was never so happy for a ham and cheese,
as I was back then!

Grilled chicken, cut up. Egg noodles cooked. Mix together and pour one to two cans of either cream of chicken soup or cream of mushroom soup mixed with a little water to make a gravy. It sounds too easy to be good, but WOW, someone made it for me when I had surgery, and I now make it for my family!
