Can't Eat Beef anymore...need Some New Recipes!

I recently discovered that I am allergic to red meat. In the past our family ate mainly ground beef/beef dishes throughout the week with some chicken and fish dishes mixed in. I cook a lot and make a lot from scratch but I do tend to make a lot of QUICK oven dishes (casseroles, etc) and crockpot stuff or soups due to a busy schedule. I am needing new recipes. I can eat turkey, fish, beans, chicken and some pork (though our family doesn't care to eat a lot of pork). I need recipes that are QUICK AND SIMPLE, WITHOUT A LOT OF FANCY INGREDIENTS, AND KID/TEEN FRIENDLY. I would love to have dishes that are meatless and more easy soup and casserole dishes. Anyone have any recipes that are favorites of their families that they would share? I love Rachel Ray but a lot of times her recipes really take a lot more time than I have and ingredients that I do not have in my pantry/freezer. I frequent allrecipes.com and some of those sites but I am looking for recipes that you all feed your families a lot...your good ol' standby's! :) Look forward to hearing from you mommy chef's out there! :) Thanks!

Ah! Thank you to each and every one of you who posted to give me ideas. I had already been sub ground turkey for most dishes that called for hamburger...I probably should have included that info in my request. BUT, I am still very grateful for all of you who took the time to give me recipes and new ideas. I plan to try quite a few of them. I hope if you see this post and have more to share you will message me - this is a lifestyle change so I will always need new and fresh ideas! THANKS TONS N BUNCHES :)

Quick and Easy Chicken and Dumplings:

I bake a chicken the previous night for this recipe. You must use some of the juices from the baking pan to make it right.

Ingredients:

chicken (some of the juices from baking it)
carrots (whole baby ones)
1 can of Chicken and Stars soup (small)
1 cup frozen peas
1 cup frozen corn
salt and pepper
2 cups Bisquick
2/3 cup milk
butter

Take one baked chicken (small is fine) and tear all the meat off into small, bite size pieces. Place the chicken pieces in a large, deep covered pot with about 4 inches of tap water. Add the carrots, can of soup, salt and pepper to taste and bring to a boil. Once it begins to boil, I crack the lid and lower the heat so the water can cook down a bit.

While waiting for it to boil, mix together the Bisquick and 2/3 c milk in a bowl. (dumpling directions are on the side of every Bisquick box). Set aside.

Add the frozen peas and corn to the pot. After the liquid has boiled down to 3 inches, I take a tablespoon and add the dumplings to the pot just dropping them in the soup in big dollops. The entire pot should be full of them. Lower the heat to low and cover for about 10 minutes then remove the lid and cook another 10 minutes. The dumplings should have swelled up really nice and big.

Serve in a bowl with a dollop of butter on top to melt.

My kids and friends go absolutely nuts over this ridicuously easy recipe!

Note: The Chicken and Stars soup is an absolutely necessary ingredient. You will have to experiment with the amount of water you use. Sometimes, if I cook it too long, I wind up not having enough liquid to serve with the dumplings.

If you can eat other types of meat (ie: venison of all sorts...) you could do that for one thing. Most venison cooks up just like beef and as far as I'm concerned there really isn't a difference, despite peoples complaints that it tastes "gamey" to them. The health benefits far outweigh that! For example, beef contains 12 g of fat while buffalo contains only 4g...

Otherwise, I guess going to any of the online recipe sites would be very helpful! AllRecipes.com, leftoverchef.com, and many others for wonderful ideas!

Hope this is some help! And here's my fave chick pot pie recipe (quick and easy-peasy!)

one box refrigerated pie crusts
one can chicken gravy
one can chicken breasts in water (or use leftovers from another nights roast chicken)
one bag frozen veggies (your favorite variety...dont be afraid to experiment!)

pre heat oven to 350F. cook veggies per bag instructions, then drain excess water from the veggies and the canned chicken. Mix canned chicken and veggies together, set aside. Take one of the refrigerated pie crusts and place on bottom of pie pan, fill with the chicken and veggie mix, put the gravy on top, then place the second pie crust on top. Crimp the edges together or get all sorts of creative with the top crust (it's up to you again!) and then cook for about 40 min or until crust is golden brown.

I hope your family loves this as much as mine does!

This one takes a little bit of time, but can be assembled one night and cooked the next!

Chicken, Broccoli & Rice Casserole

Boil and drain 2 or 3 chicken breasts, cook 4 servings of rice, and one bag of frozen broccoli (I like chopped broccoli). Then, in a small sauce pan, heat one can each of cream of chicken and cream of mushroom with 8 oz Cheez Whiz. Chop the chicken into bite-size pieces, and combine all ingredients in a 9x13 pan. Cook on 350 for 30-45 minutes until heated through.

Tips: I boil the chicken, then remove the chicken and use the same pan/water to cook boil-in-bag rice. Then I use a medium saucepan to steam the broccoli, set it aside, then use that pan to heat the cheese mixture. This saves on dishes!

hey Roxanna! not a specific recipe, but a sure fire for the kids. if you take cooked pasta ( i always use about 3 dif. types) cool it w/ water,then toss w/ 3 eggs and 1/2 cup parm cheese smoosh t into a cake pan, to make the crust, top with spg sauce...bake for 1/2 hour @ 350, you've got yourself a spaghetti pie! having said that, i always add stuff ( before the sauce) shrooms, pepperoni,chicken... hope it woks for ya! Chicken Swiss Casserole! (CrockPot)

6 Chicken breasts
6-8 slices swiss cheese
1-2 cans cream of mushroom soup
1/2 cup milk
2 boxes savory stove-top stuffing
1 stick butter

Spray crock-pot with non-stick spray. Layer chicken and cheese. Mix milk and soup together and pour over cheese. Add stuffing straight from box and pour melted butter on top. Cook for 6 hours. Do not over cook!

We use ground turkey in anything that calls for ground beef. It's just way healthier anyway, and in a casserole, it's hard to tell the difference.

Here are two of my favorite recipes. (The second one is vegan.) Oh, and I only cook easy.

Tamale pie:
Brown ground turkey. Add some taco seasoning (to taste). Once cooked, add canned tomatoes, frozen corn, pinto, black, or other beans. Pour into a pan and top with shredded cheese. Mix up some jiffy corn muffin mix and pour on top. (2 boxes works if you're using a 9x13 pan.) Bake (temp. on box) until corn bread is cooked. Put a little butter on top to melt.

Black bean and sweet potatoe enchiladas:
Combine canned sweet potatoes (you can use fresh, this is just easier, and it doesn't seem to make a difference) and canned black beans (we like a 2 to 1 ratio, but you can adjust for your family's taste ). Mash slightly.
Pour canned enchilada sauce in 9x13 pan. Flip corn tortillas in it so both sides are covered. Put mixture into tortillas and wrap up. Bake at 350 until slightly crunchy and warmed (approx 30 min.) You can do this with flour tortillas as well. If you don't need to do vegan, you can add cheese as well.

if you like spicy chicken this is a great recipe and easy... i usually make this for taco/mexican night. take 2-3 pounds of frozen chicken breast (boneless and skinless) and put in crock pot. one packet of your favorite taco seasoning (or make your own). 16 oz of favorite salsa. put on low and let go all day. before you are ready for dinner shred the chicken with a fork (this should be really easy since it's been cooking all day) and add a small tub of sour cream and stir all together. add lettuce/cheese/tomatoes/refried beans/onions on the side and you can have tacos/tostada whatever you like. you might want to double the recipe and you can have leftovers.

you can also use the same premise for creamy chicken and mushroom. use frozen chicken again with cream of mushroom soup. towards the end of cooking shred the chicken again and throw in some frozen veggies. you can make some pasta to put it over or it tastes great with mashed potatoes too.

I know you said you didn't care for pork, but this is a great recipe and you could probably substitute chicken for the pork.

Pulled Pork Burrito's or Taco's

2lb Pork Roast
1 Can Original Rotel or salsa
Garlic Powder
1 Bag Frozen Southwestern Veggies (Hyvee)

Put Roast or Chicken Breasts in Crock Pot
Pour Rotel over Roast sprinkle with Garlic Powder
Cook for 8-10 hrs-use forks to pull meat apart-
1 Hour before it's done add the southwestern veggies
After done drain juice- Make Burrito's or Taco's

Oven-Baked Chicken Parmesan

4 boneless skinless chicken Breast halves
1 egg slightly beaten
3/4 cup Italian seasoned dry bread crumbs
1 Jar of Ragu or Favorite Pasta Sauce (I prefer homemade)
1 C shredded Mozzarella Cheese

Preheat oven to 400* dip chicken in egg then in Bread Crumbs, coating well.

In 13X9 glass baking dish arrange chicken. Bake uncovered 20 minutes.

Pour Pasta sauce over chicken, then top with cheese. Bake an additional 10 minutes or until chicken is no longer pink.
Serve over favorite pasta. Spaghetti or Angel Hair is great
