Black Eyed Pea Recipes
Ok mamas I need all your great black eyed pea recipes. & my hubby HATES them, so it's gotta be super yummy! TIA

My husband didn't like black eyed peas but likes these. Boil or simmer frozen peas in chicken broth. I use some reg and some garlic chicken broth. Add one can or hot rotel or mild if you don't like spicy. Add a lot of chopped up ham and salt and pepper to taste. I cook for about an hour and add the ham for the last 20 min. Happy New Year!

I gotta second the Texas Caviar suggestion. I crave that stuff. I cheat and use canned black-eyed peas, drain and rinse them. I gently mix them with a chopped, seeded jalapeno, sliced green onions, chopped yellow or red bell pepper (not the whole thing, just part of one), halved grape tomatoes if I have them, and chopped cilantro leaves. I toss with homemade red wine vinegar vinaigrette (3 parts olive oil to one part vinegar) and season with salt and black pepper. It's fantastic with the scoops chips.

Seriously, you just can't go wrong if you cook 'em up with bacon! Fry some bacon and then cook some onion in the drippings, make some cornbread or rice & MMMMmmmmm.

I know this is late, but maybe for future reference. My mother-in-law used to make her black eyed peas like this and besides hopping john, which is my husband's absolute favorite, is the only other way my husband will eat them.
-1/4 to 1/3 pkg bacon cut into 1 inch pieces and fried in the bottom of a medium to large sized soup pot
-after bacon renders and starts getting a little crispy, add 1/2 a chopped onion
-sautee until bacon is crisp and onion is starting to get opaque (do not drain bacon grease)
-add 2 or 3 cans fresh hulled black eyed peas (do not drain)
-add 1 can rotel (do not drain)
-salt and pepper to taste
-heat through
Serve in bowls like a soup. This is great with homemade buttered cornbread. :-)

I'm not a lover of them either but I eat them every January 1st. I have found I like Hoppin John. You can find the recipe at the Southern Living website.

First off... I'm against the grain here because I love black eyed peas. My family does not.
I make Texas Cavier. If you want the exact recipe, I'll send it.
Bottom line..... Steam peas to firm but tender, strain, set aside. Combine vinegar, apple cider mixture. Mix with peas. Add chopped onion & celery to taste.. Let sit to allow flavor to set.
I dont follow the "recipe", we lke to add a little red pepper, imit some onion and celery.
