Baking a Cake with Two Eggs When It Calls for 3.. Ok or Not Ok

This probably isn't the most smartest question, but I do not usually bake cakes. On the box it calls for three eggs, and I only have two. Will it turn out fine or do I need to suck it up and go to store . I've got a ton of things to do at home, so just wondering if this will work out alright. I'm sure one person in the universe has done this before. Hope everyone is enjoying this holiday season!

So What Happened?

Thanks ladies. I went out and got more eggs. Good to know their are substitutions out there. Did not have enough coffee this morning. Thanks for taking time to answer my ridiculous post! 😘

This is why my daughter does all of the baking :). She is 11 and absolutely amazing at it. She never uses boxed mixes either and often her recipes call for 2. So I would Google...but I am glad you got the right amount of eggs to use.

I would go borrow an egg from a neighbor and repay with a slice of cake.

If you have any applesauce or mayonnaise, add that in place of the missing egg. It will provide the missing liquid and fat (if you use mayo)...for one egg I believe the substitute is 1/4 cup of mayo or applesauce. You can also use sour cream or yogurt. but mayo is the closest substitution because it is egg-based to begin with.

I've used mayo in a cake before. It did not change the taste at all. It actually adds moisture and that is my go to for missing eggs. I have made cake using only egg whites and it came out dry so I do not do that. I use applesauce in place of oil sometimes.

Well, there's the time-honored tradition of borrowing from a neighbor - egg, cup of sugar, you name it.

I'm not sure about mayo in a cake - might taste funny. Fruit yes - bananas, applesauce, etc.

I've baked boxed cakes without any eggs. I actually forgot them once. It wasn't the end of the world the cake turned out ok. Happy baking.

For the future, a really easy egg substitute is:

1.5 TBSP oil
1.5 TBSP water
1 tsp baking powder
Mix all three together and let sit for a couple of minutes, then add to the batter
