Vegetarian Cookbook Ideas?

Hi Moms - hubby is working in NYC and has a small kitchen. Don't know how easy the shopping is there, but I'd like to find him a vegetarian cookbook for limited ingredients so he can make something tasty without having a full pantry of stuff.

Have you come across anything like this?

My two favorites are Laurel's Kitchen Recipes and the Moosewood Cookbook.

I love the moosewood cook books! I used to live in NYC (manhattan) and shopping was very easy - you could find anything there.

I really like Fix it and Forget it for the Vegetarian Slow Cooker, there are other crock pot cookbooks for vegetarians as well. Those tend to not be very complicated recipes.

I also have a simple book called 'being vegetarian'

Lots of other good ones on Amazon I'm sure. Or if Vegetarian Times magazine puts out a book, that would be a good one, too. There is always a nice variety in there.
