Easy, Healthy Cookbooks

Greetings Moms!
Well, I will admit, I am pretty much a dunce when it comes to cooking! I am no good at all at coming up with things to make. We eat pretty healthy and I am really into whole grains and low fat/calories. Does anyone have any suggestions for a cookbook that has these types of meals in them? I would really like a cookbook so I could have lots of recipes all in one spot. Any suggestions would be great!

Hi R.,

I'm a big fan of the Taste of Home series of cookbooks/magazines. They have one called Light and Healthy or something to that effect...another of my favorites is the Simple and Delicious. Usually I get the magazines, but they are going to have a cookbook come out under that name. I usually find a good variety of recipes and some of my daughter's favorites have come from those books.

I found a great cookbook at a school book sale, but have also seen it at the Walmart in Blackfoot. It is called "Fix it and Forget It". It's for the crockpot, but you can also use the oven and/or the stovetop for some of the recipes. They also have one with the same name but "5 Ingredients or Less".

I also subscribe to the Taste of Home magazines and love them too. You can get a cookbook of their very best recipes at the end of each year, which I do, and I love them also. Good luck to you! And thank you for being a teacher! Everyone knows that teachers are underpaid but are so very important to our children's lives! Thank you so much!

Cooking Light Superfast Suppers is a fantastic cookbook for busy families! It even give you a grocery list of basics to have on hand for most of the recipes plus variations for picky eaters. Try looking on Amazon for a used copy to pick up really cheap! Bon Appetit!

I agree with Carrie, the Taste of Home magazines are awesome. a friend gave me my first as a gift subscription when we got married 5 years ago, They run about $10-$15 a year for the magazine depending on what deal you sign up under and they come every two months. (www.tasteofhome.com) the light and tasty is all about healthy cooking. simple and delicious meals under 30 min. there are always great ideas in them. I was just looking at mine today! lol.
also Usborne just came out with a Healthy Cooking cook book which I just got. It has great ideas that are simple and the kids can help make or make on their own depending on age-- www.celestsbooks.com if you are interested in that.
there is also a vegetarian cooking book with Usborne I just won at one of our training meetings. I haven't looked at that one yet but am excited to.
I love books. lol. and I love cooking.
Another cookbook I really like is "The I Can't Cook Syndrome" someone gave it to me as a wedding gift, I LOVE the 2 hour rolls in it. I make them somtimes with whole wheat flour and sometimes white.
I got R. Ray's 30 min. meals book last fall too and have enjoyed trying out some of those, although a lot of her recipes call for some exotic ingredients sometimes! lol. but it is great to get a meal completely done in 30 min. some of her recipes are done in 15.
another thing I do is when we try a recipe and we love it, I type it up and put it in a binder in a clear sleeve. that way I have our family fav's I know work and we love on hand for when I make up my menu. instead of the hunt of where was that recipe? I do it that night (when I am on my A game! lol) and get it into the book right away so it doesn't stack up. Part of our dinner clean up ritual.

Get the Moosewood cookbooks by Mollie Katzen. They are vegetarian, but you could add meat to most of the recipes if you want. There are a ton of great recipes, most are easy, and she even has a low fat version.

Hi R.,
I like allrecipes.com. That way you can put in an ingredient or another key word such as "quick dinners; low-fat; vegetarian" and then you have an alomost unlimited number of ideas. They also have ratings for the recipes so you can see if other people liked them or what changes you could make etc.
Bettycrocker.com is also nice if you like to use boxed or canned products to make things quicker (like soup mixes or boxed rice and pasta).

When I need a recipe I google the main item and see what I can find.Most of the websites are printer friendly so I punch a hole in the ones that are great and put in a binder. I haven't had to buy a cook book in a long time.

You know, I have Betty Crocker Bridal Edition, and I love it because all of the recipes' ingredients, you can find in your kitchen. Mine is not lowfat, but I would check out the website to see if they offer one that is.
