Oh My, Turkey Again (3Rd Day!!) Any Recipes Ideas?

We still have plenty of turkey left overs...and I am about to through up just to look at it. Any ideas to use the damn turkey's left overs =(

So What Happened?

I did the enchiladas today and I think that is as much Turkey I can serve my family before they go on stride, so I am following your other suggestions and freeze the rest and follow your other recipes later. Thank you

Turkey pot pie. It's super easy when you cheat and just buy the ready-made pie crusts.

Okay I'm weird but I love the Thanksgiving leftovers.

Anyway, put the leftover meat and any gravy in the freezer. In a couple of weeks when the Christmas craziness has you about to blow your top, those leftovers in the freezer will look sooo good, just heat, make some rice and a veggie or salad and dinner is done.

I would be so tired of turkey by the third day that I would package up the leftovers in family size packages and put them in the freezer.

I would then put the carcass in a large kettle with water and simmer it until most of the meat falls off the bone easily. I'd take out the bones, put in potatoes, carrots, onions and any other vegetables as well as some herbs I like and make a soup. You can get ideas for herbs by googling turkey soup or chicken soup and look at the recipes.

Turkey enchiladas:
Leftover turkey cubed
1 onion chopped and sauteed
Corn tortillas
Cheese
Enchilada sauce
Spices (cumin, garlic, salt pepper, chili powder) to taste

Mix Turkey, onion, and spices together
fill tortilla with turkey mix and cheese, roll and place in casserole dish seam side down
Top with enchilada sauce and more cheese
Bake til hot

I like to put some made stuffing (even stove top if you are out by now) on the bottom of the pan, add the turkey, some veggie (corn is good) and top it with gravy. Yummy casserole, but, yes, does taste like Thanksgiving dinner all over again... We are having it tomorrow.

Soup.

I'm sure you made sandwiches.

Chop it all up, put it in a casserole dish, sprinkle grated cheese all over it, whatever kind you like, and stick it in the oven, and bake until hot and the cheese is melted.
So easy. Good too.

Or make nachos with it. Chop it all up or shred it, melt cheese over it, get some salsa and tortilla chips, and you can have chili too on top. Yum.

Make salads with it too.

Turkey salad, enchiladas, pot pie, or shred it and heat it through with BBQ sauce, toast some buns and have "pulled turkey" sandwiches, YUM!
Put what you don't use in good quality bags or containers and freeze it for nights you need quick, precooked meat :-)

Turkey A La King

What you will need:
Flour (I use about 1/4 cup)
Butter (I use 1 stick)
Milk (one cup)
Pimentos (1 jar - I think it's like 2 ounces)
salt
pepper
finely chopped onion
mixed veggies (frozen)
biscuits (store brand is fine)

while preparing white sauce - bake biscuits...

white sauce:
melt butter
In a small, melt butter over low heat. Blend flour into the melted butter.
Add 1/4 teaspoon of salt. Cook over low heat, stirring, for 4 to 5 minutes. Cooking for this length of time will minimize 'flour' taste. SLOWLY add 1 cup of milk, stirring constantly.

You can double this if you have a bigger family to feed.

Add in frozen veggies and turkey until heated through... serve over prepared biscuits cut in half...

YUMM!!!!!!

I am going to do a "stir fry" veggies, cabbage, celery, green and red peppers, onion, zucchini, carrots, with couscous and throw in the turkey instead of chicken.
Might use the "oriental stir fry packet" for seasoning.

At this point I freeze what remains and eat something else for a few days.
Fish or shrimp is looking good!
When you feel like it you can use the leftover turkey in a pot pie or casserole.

We make a "bowl" as we call it - like KFC - put in mashed potatoes, dressing/stuffing, turkey, gravy, etc. - just about anything from the dinner goes into a bowl about the size of a cereal or soup bowl, except cranberries; heat it in the microwave or oven. Tastes great!! My kids love it. Of course, we also love turkey sandwiches with mayo and onion powder - yummy!! I never get tired of turkey!!

Just how big was this thing?? We had a 14 pounder for five people but then I planned on being able to have lots of leftovers.

I usually cook 1 turkey per month to use as sammie meat.

Deli Turkey $10-12 per pound
Holiday Turkey 11 CENTS to 50 CENTS per pound.

Sold.

My deep freeze died on me, though!!! Sniff. So no turkey sammies this year!

I'll take them, LOL! I love turkey and told my mom I wanted more leftovers but she kept them, grr...it was a 20 lb. turkey, she could have given me and my daughter some more! Anyway.... She makes turkey sandwiches, serves cold slices with a side of a veggie, and once there isn't much meat left, she boils the carcass, picks the meat off, and makes a delicious turkey vegetable soup that will literally cure you of any colds.

You could also do a turkey salad, you know, lettuce and veggies, with chunks of turkey instead of tuna or chicken, or a turkey chop chop, with some rice, beans, grated cheese, tomato chunks, and a mustard sauce (sort of like Pollo Tropical's Tropichops or Chicken Kitchen's Chop Chop), rice with turkey (instead of arroz con pollo), turkey tacos, or chop up some veggies and put them with the turkey slices and some chicken broth to give it more flavor, maybe do a stir fry. A turkey cheese melt casserole perhaps?

What my mom does is she will alternate the days they eat turkey, so they don't get sick of it. One day, they will do turkey, and the next day, fish. Then back to turkey, then steak. You get my idea. This prevents a turkey overload because you're not eating the same thing over and over. Within less than a week, the turkey is ready to be boiled down and made into a soup (with chunks of turkey in it, of course!). The turkey stays as long as you keep it in the fridge and you keep the door closed, and you can always switch it to a colder temperature if you're worried the door gets opened too often or that the turkey will spoil...
