Need Lactose-free Dessert and Casserole Recipes
My husband (although he doesn't like for me to talk about it) is lactose intolerant. I know cookbooks exist out there for lactose-free cooking and desserts, but with Christmas only a few days away, I don't have time to get one. So, I'm appealing to the rest of you moms out there. I need an ooey-gooey dessert (preferably chocolatey) that is lactose-free. I also need a winter squash casserole recipe that is lactose-free. I intend to prepare both of these dishes for Christmas Eve and Christmas Day dinner. Can anyone help me out? Thanks.

Hi C.. It is not hard to make a non-dairy dish. Just a couple of substitutions and no one will taste the difference. Pick your favorite recipe then whenever it calls for milk substitute soy milk. Trust me, it does not change the taste. Just make sure you use plain soy milk, not vanilla or chocolate. lol. Silk brand and Westsoy brand are what I use. And when the recipe calls for butter use Fleishman's Unsalted stick. It has no dairy in it.
As for a chocolate recipe, there are recipes that use baking cocoa for their chocolate. If you look online at bettycrocker.com or recipes.com and type in cocoa recipes you may find some. Then just substitute with soy and Fleishman's Unsalted when it calls for dairy.

You can cook your fav recipes & substitute Soy milk I recommend Plain "Silk" in the red carton or sugar free "SIlk" in the green carton for savory dishes. Or almond milk or rice milk. For sweeter desserts use vanilla soy, it's very yummy.
Also, Goat & Sheep products tend to be tolerated by many with (cow) milk allergies. There are a lot of eally good goat cheeses out there. Also goat butter, milk & cream - if he is missing those things. Softer cheeses tend to be tolerated better than the harder ones - for allergies anyway.
I always made the pumpkin pie & used silk instead of evap milk -- cant tell the difference. If you don't make your own crust watch the ingredients on store bought.

I don't have the recipe with me, but go to Foodtv.com and look up mooless chocolate pie by Alton Brown. It uses silken tofu for a creamy texture and is fantastic. Good luck.

I too am lactose intolerant, and have used Silk milk varieties for me and my family for years. I do find that since soy based products are derivative of soy beans, that they do still cause gas, but not the other irritable side effects that we, the lactose intolerant crowd are all too familiar with.

My son is lactose intollerent and is now 29. He use to take lactaid tablets from the drugstore and he could eat regular dishes. That would be much simpler than making special dishes.
