Healthy Freezer Meal Ideas

My MIL is coming to visit and wants to help out by making some freezer meals for us. I am trying to come up with some healthier ideas and was hoping maybe some of you might have a few. TIA!

-Shepherd's pie (have her make it w/ground turkey for a healthier version)
-Seasoned taco meat (all you have to do it thaw, heat & serve w/tacos &
toppings)
-fajita filling (hv her marinate & cook the thin steaks then buy a pack of
frozen red/yellow peppers & onions to quickly cook up on the night you
are going to use it)
-veggie lasagna
-hv her pick up some veggie burger patties you can keep in the freezer
-she can make chicken/veggie soup then you freeze it
-this she an make one night but not freeze...veggie stir fry w/rice
-spaghetti sauce w/ground turkey. The night you thaw out, you cook up
the pasta noodles
-chicken pot pie (not quite as healthy but yummy)

Chicken Pot Pie, Lasagna, stuffed pasta shells

I have a homemade marinara that my family loves and I keep at least 1 quart in the freezer all the time for a quick pasta meal.

When I buy my meats and chicken from the butcher, I individually wrap each chicken breast, steak, and make burgers with the ground beef for a quick meal. you can thaw whatever you need without having to thaw an entire package of meat if you don't want to.

She could prepare fajita and taco meats so all you have to do is reheat and add the toppings.

Sweet and spicy (not very) Salmon. Salmon fillets, precut into serving sizes, 2T lemon juice, 4T pineapple juice. Put in big freezer bag. In a smaller freezer bag, put in 2T chili powder, 2T lemon zest, 2T brown sugar, 1t salt. Seal the small bag and tuck in the bigger bag. Freeze. To cook, thaw, drain marinade, put salmon on a sheet pan, put rub/seasoning onto the fish, cook at 400'F until done. Serve with steamed veggies.

Stupidly Easy Roasted Chicken (my personal recipe, better than any rotisserie chicken). Split the back of a whole chicken, trim off excess fat and yucky stuff, put into a big freezer bag. Freeze. Thaw overnight. On cooking day, put chicken on foil lined sheet pan, as flat as you can get it to lay. Preheat oven to 500'F. Season chicken with your favorite basic seasoning salt (I use Lawry's). Roast 15 minutes in the preheated oven. Reduce heat to 450'F and continue roasting 15 minutes. Baste chicken with pan drippings, reduce heat to 425'F and continue roasting 20-30 minutes, to an internal temperature of 180'F. Let stand 10 minutes before serving or cutting. Serve with your favorite sides.

hot dishes,sloppy joes,cook off a bunch of meats-pull n reheat-spag.sauce.im single n work my hiney off everyday-so after work the LAST thing i feel like doing is cooking-so couple times a month i do big cook off-meats,hot dishes etc.then i freeze in individual meals,so alls i have to do is add whatever side dish i want with it.nuke 2 min.din dins ready..
