Fried Chicken Recipe

Ok, so my dad wants fried chicken for his birthday dinner. The last time I remember making some that tastes good was in high school. I just went to Walmart and bought a small deep fryer, but I need a good recipe for the coating. Anyone have one to share? Otherwise my poor husband is going to be forced to eat chicken all weekend while I try new recipes :-) Thanks in advance!

So What Happened?

Made my fried chicken "trial" yesterday. It was good! It took forever! (I have a small deep fryer) but it was yummy!

When I make fried chicken, here's what I do:

Soak the chicken in a bowl of buttermilk over night in the fridge.
When you are ready to cook:
In one bowl, I beat about 6-7 eggs and add a dash of salt and pepper. In another bowl, I fill with flour (1-1 1/2 cups?) and cover the top with celery salt, pepper, and seasoned salt (I like it spicy) until you don't see the flour anymore,and a couple shakes of salt. Mix these up. I heat oil in the bottom of an electric skillet at 300 until hot. The oil should be about 3/4 - 1 inch deep to be able to go half way up the chicken. Dip the chicken in the flour mixture, egg mixture, flour mixture again, and place in oil. Cook covered until golden brown on one side, about 30 min. Flip chicken and do the other side until golden brown, about 15-20 min. Drain on a cooling rack that's set inside a cookie sheet to drain off the grease. I've always gotten rave reviews on my chicken. I do almost the same thing to make chicken fried steak. Just use a bit less oil as the meat isn't as thick, and leave out the buttermilk soak.

hopefully i am not too late on answering this for you :) when i make fried chicken i have it sit in a milk bath (milk or buttermilk- whatever you prefer) in a large bowl in the fridge for approx. 2 hours... then when i am ready to prepare chicken all i do is heat the oil to medium high.... a good way to test if the oil is done is to get the handle of a wooden spoon and place it in the oil. if bubbles appear and come to the surface then it is hot enough.... anyways i get another bowl and mix seasoning salt and pepper in the bowl... then i get the chicken and put in th flour to coat... i like to try and cook each different piece of chicken together... drumsticks together, thighs together, legs together... remember the breast and thigh cooks longer... normally takes about 15- 20 minutes for those pices while the legs and drumsticks take about 10-12 minutes....

My Memama used to make a fried chicken for every church event and hers was always gone first. Here is her recipe:
1 small chicken cut into pieces, salted and refridgerated overnight
Fill paper bag with flour
Sprinkle chicken pieces with paprika and drop into bag. Shake well
Cook in Mazola oil,medium high heat until chicken is done and crispy. Drain well

I think the paprika always gave it a little kick and made it look beautifully golden brown! good luck!

I make mine just like Eileen. I think the salt and pepper add plenty of flavor, and making sure its not cooked too fast. Sounds yummy!!!

My mom makes the best fried chicken, and strangely enough she does nothing to it! She simply washes the chicken, seasons it with salt and pepper and dredges it in flour. She says the trick to a good fried chicken is that you make sure to shake off all excess flour and the cooking oil must be hot when the chicken hits the pan. But don't cook the chicken too quickly. It needs to cook over moderate heat so that it cooks through to the bone, but the outside is left crisp and golden. Good luck!
