I eat low carb and just make a side of pasta or brown rice for the rest of the family and eat extra vegetables myself. Ypu can also check out South Beach Diet website for a lot of great low carb recipes as well as Meditteranean Diet sites.

Anything involving a rotisserie chicken is good! I love them and buy one each week- doesn't heat up the kitchen and we can usuall get two meals out of it.
- shred it over a hearty salad
- mix with a little oil & vinegar, add shredded carrots and roll into a lettuce leaf for a "wrap"
- sliced with grilled veggies and cheeses

I just finished reading The Skinny Carb (diet, book, somthing I can't remember) it is an amazing book all about how you can use better choices and still eat resistant starches to help loose weight and even boost fat burning. There is also the Carb Lovers Diet.

These books are about lifestyle changes and not dieting. Dieting is not effective (in 99% of cases) because as soon as your "diet" period is over the weight comes right back. My dad did Atkins for years (off and on) he always lost weight when he was "on" but at 47 he had a massive heart attack. Thankfully my parents live across the street from a major hospital, and he is still with us today. But it just solidified my belief that lifestyle changes are what is best. Diets don't work.

What I like about the books I mentioned is that they are chock full of recipies and meal plans. They are also things I can feed my entire family (and include desserts :))

Good luck on your journey!!

salads are always easy to make. I buy the caeser salad kits at walmart. I cook some chicken in the pan with some water so the chicken steams when i cover it and some mrs.dash. it takes about 5-7 minutes to cook. I use balsamic vinegar and olive oil for dressing. I eat lots of meals with just meat and veggies and little or no pasta. I would say stay away from white breads and rice. you can have some brown rice. have no more than a cup. get a recipie book for crockpot dinners or look online. good luck. by making a lifestyle change myself,I have lost 28 pounds and my husband lost 22 pounds. remember, that you need to exercise in order to take the weight off in conjunction with eating right.

My husband is diabetic so we are very mindful of carbs. I have found if you cook your meat dish simply, then have a salad, a bread and vegetable you will do well. Include your fruit for dessert instead of something sugary. Limiting yourself on the bread is key.

At my house we don't get fancy. For example, your favorite vegetable (say asparagus or broccoli) grilled or baked with a bit of olive oil and garlic is delicious. I buy dried garlic at Sprouts.

Your favorite Salad.

Fruit for dessert.

When we make fajitas there are low carb tortillas about 1/2 the carbs of others.

It's summer...... so grill. Avoid sauces.
