Does Anyone Know of a Non-dairy Cake?

I am a Nanny to a little boy named Henry. He was born at 25 weeks and April 30th is his 1st birthday. His mom expressed to me that she would love to have a cake for him but since his adjusted age is really more like 9 months and he has really bad acid reflux she wasn't going to try to get him a cake because of the fear of introducing dairy too soon. Right now they have him on a hypo-allergenic formula called Neocate. I was just wondering if there were other kids out there with allergies and if so if someone had a recipe or knew of a bakery that specialized in this area. I kind of want to make it a suprise.

I'm not very familiar with the non-dairy lifestyle, but I did see this vegan recipe on allrecipes.com that looked good.

It's a vegan website and there are may recipes for different kinds of cake. If you get the margarine called Earth Balance, you can make a very nice butter cream frosting.

I'd be worried about introducing wheat, eggs & soy too soon, too! If she really wants a cake, try searching for "vegan bakery", there's also a vegan restarant in tiwn, they may be able to help you, but the name eludes me. i'm sure there's someone in tucson to help, but it will have wheat and soy in it.

My son who is now 8 is allergic to the animal enzymes in dairy, we found this out when he was nursing and I would have milk or eggs. Anyway on his 1st birthday and many more we have has rice crispy treats, you can shape them into anything, which is cool, we shaped it into cars and roads, we've had teddy bear shapes, use your imagination, if you are worried about the sugar content don't he will only have his birthday once and he will get more sticky than anything else. Also you can have cup cakes for the other guests, but most of the kids love the rice cripy treats. For decorations use licorice and other assorted candies or sprinkles, colored sugars, etc.

I have not read what other have wrote yet so I am probably repeating, but my sister can not have dairy or wheat. We found a wonderful cake mix at the health food store. It was amazing, I would buy it and make it for any occasion, and I don't think people would know unless you told them. I can't remember the brand but we had just gone to the health food store and asked what they recommended, the best seller! If you want the name I could find out.

I have a recipe for a sugar free dairy free chocolate cake from a book called "The 'I Can't Believe This Has No Sugar' Cookbook by Deborah E. Buhr. The recipe is as follows:

2. C frozen, dark, sweet cherries partially thawed.
2 to 4 tbls water
4 egg whites OR 2 extra large eggs
1/3 cup vegetable oil
1/4 cup unsweetened grape juice
1/4 cup unsweetend apple juice concentrate
1 tbls plus 2 tsp all-purpose flour
1 1/3 C. all-purpose flower
1/4 cup firmly packed unsweetend cocoa powder or carob powder
1 1/4 tsp. baking soda

Preheat oven to 325. Oil and flour 9x9 pan. Puree partially thawed cherries and water in a blender. Blend until mixture turns and folds. Place puree in a small strainer over a small bowl and let drain for 10 minutes, stirring occasionally. Pour pulp remaining in strainer into a measuring cup and add enough of the juice to make 3/4 cup of pulp and juice. In a large bowl combine 3/4 c. cherry pulp and juice, eggs, oil, concentrates, and 1 tbsp plus 2 tsp flour. Beat for 30 seconds with beater. Add 1 1/3 cups flour and cocoa;beat well. Stir in baking soda quickly, and then mix (28 to 30 beats); immediatly pour mixture into prepared baking pan.
Bake 30-31 minutes, or until a cake tester inserted in center of cake comes out clean.
Remove pan from oven and cool on wire rack until completely cooled. To store, cover coo9led cake with plastic wrap or in an airtight container and store on countertop or free.
