Chocolate Cake or Other Cake Recipes for a Son Who Has: Milk, Egg,wheat Allergy
Hi everyone,
My son was diagnosed with all of the above allergies as well as shrimp and sesame seeds. He's almost 19 months and although I've become really good at feeding him food w/o any of the above, I still don't have a really good tasting cake recipe for him that does not contain any of the things I mentioned here that he's allergic to. I was wondering if any of you can share a recipe w/o any of the ingredients my son is allergic to. I've been able to get him his sweets from whole foods and have bought him cookies from Enjoy life, Barbara's cookies, etc. but I wanted to be able to bake him a cake, he loves anything with chocolate. I really appreciate whatever you can share with regard to this, thanks so much !

There is a great book called "Special Diets for Special Kids" written by Lisa Lewis, Phd.
It has over 150 recipes dealing with special diets. A ton of chocolate cake, chocolate pudding, chocolate pie recipes. I got it at Barnes n Nobles.

AWWW...poor lil one! I visit the peta site often...heres a link for vegan foods that you can see. Also theres a rest. called ZENITH in pittsburgh that has the absolute best vegan choc. cake I have ever had. Best cake vegan or not. This is our favorite birthday cake! I make it every year and just anytime we want cake!
You can decorate it with melted choc chips and sunspire sundrops (like M&Ms) or fruit or anything really.
Also - SPELT flour is excellent for baking - so give that a try as a replacement for any recipe! Also, in any recipe that uses eggs for "rising", you can replace each egg with 1 Teaspoon of Baking Powder. Enjoy!
MORINU Chocolate Cake
Ingredients
Dry Ingredients:
1-1/3 cups whole wheat pastry flour (or semolina or spelt flour)
1/2 tsp. baking soda
1/2 tsp. cinnamon
Wet Ingredients:
1/4 cup unsweetened applesauce
1 tsp. canola oil
1/2 cup Brown Rice Syrup
1 package Mori-Nu Silken Lite Firm Tofu
1 tsp. vanilla extract
1/3 cup Raw Cacao Powder (or cocoa powder)
1 C Grain Sweetened Chocolate Chips or Cacao Nibs (optional)
Preheat oven to 350 degrees.
Cut a piece of wax paper to fit bottom of 8 x 8" baking pan. With paper removed, grease bottom and sides of pan with canola oil or spray. Place wax paper on top of greased pan bottom.
In a food processor fitted with metal chopping blade, process all dry ingredients. Empty into small bowl and set aside.
Place all wet ingredients in work bowl and process until smooth, scraping the bowl sides occasionally.
Add dry mixture all at once.
Pulse to blend until dry ingredients are just moistened.
Scrape mixture into prepared pan, sprinkle with chips/nibs if desired.
Bake for 22 minutes or until brownies pull away from sides.
Let cool for 15 minutes before turning out.

http://www.elanaspantry.com/ has some great recipes and tips. She and her son have Celiac, but she also avoids dairy, soy and other ingredients.

My daughter has the same allergies. we bought a cake mix at a health food store and then you mix that dry cake mix with a 12oz can of soda and bake as instructed on the box. for example white cake mix use a can of sprite. it taste good but the cake does not rise that much not recommended on cupcakes. hope this helps

Hi, My nephew is on a Wheat gluten casein free diet. My sister bakes cakes and brownies from boxes sold in the organic section at Giant Eagle.
She also goes to a bakery for birthday cakes in Squirrel Hill. I don't know the name but I found this old article while trying to find the name for you.

Wow, that is a difficult set of allergies to deal with! Have you looked at the Cherry Brook Kitchen products? I have tried the cake mix and brownie mix that is dairy and egg free and it is good. You have to add dairy free margarine which can be a challenge to find but if you read the ingredients Fleichman's makes one. My friend's son is allergic to milk, egg and peanuts which is why I know about the products. I believe they make one that is also wheat free. Check out the web site, www.cherrybrookkitchen.com. My son was born with a milk and soy allergy, that luckily he grew out of and is now just an intolerence.
But when he did have these allergies, I used a brand called Cherrybrook Kitchens for cakes, cookies, pancakes and brownies. they are allergen free.
when baking you can replace milk with juice.
and butter with canola oil or applesauce.
their cakes are really good and so are the frostings.
