Hi L.,

I struggle with this too as I am culinarily challenged. One place I have found some really good and easy recipes is the Real Simple magazine. They also have a website where you can look up recipes and see other readers comments on the recipes. You don't have to subscribe to the magazine to use the website - realsimple.com.

Kraft.com is a great website for very easy recipes. They also have a free monthly recipe magazine called Food and Family that is incredibly helpful and easy!

I only know of vegetarian stuff so here goes:

If you're looking for something toddler friendly try the book "Vegan Lunchbox".

I always recommend Deborah Madison's "Vegetarian Cooking for Everyone". I'm the only vegetarian in my huge family but every time I cook something out of it all the omnivores rave. It's become my cooking bible. "The Vegetarian Epicure" is also very good.

Also, my husband and I have gotten into the habit of preparing large quantities of vegetarian soups and stews and then freezing or jarring up whatever we don't immediately use. (We save all the Mason jars from our pasta sauce for this.) It's a lot of work for one day but then we pretty much live off of it for a good long while.

The South Beach Diet cookbooks have many yummy recipes. If you're looking for quick ones, they have a 30 min recipe book. I recommend borrowing it from the library to test it out. If you choose to purchase, try buy.com. Here are a few favorite page numbers...

167, 168, 197, 210, 231, 251. 186 is yummy.

Another simple thing suggested by the book is switching pasta to whole wheat and rice to brown. Then some of your recipes don't change that much.

Hi L. - and congrats on your newest arrival!

We are big grillers at our house. We grill everything from chicken to chops to salmon. It seems to be the healthiest way we can go if we're going to eat meat at dinner every night. We have experimented with many meat rubs and marinades to add extra flavor.

You might check out some cooking websites for healthy meal ideas. There is a lot out there!

Do you have a slow cooker? I have some good recipes for low-carb slow-cooker recipes, because I have a cookbook. My slow-cooker has been a life saver, so if you don't have one you should get one a.s.a.p. I also have a weight watchers cook book where all recipes have around 5 ingredients and there's a chapter on quick meals. If you message me with what kind of recipes you're interested in and your email address I can scan some and email them to you.

One of the best recipe books I have ever found it called The 6 O'Clock Scramble. The book has a menu with the recipes for everyday of the year that is broken down by seasons; Fall, Winter, Spring, and Summer. It includes a weekly grocery list etc.. The 6 O'Clock Scramble also has a websight that you can join, I think it has daily or weekly meal planning. All the meal menus are calculated to be nutricionally very balanced and healthy. Another thing I really liked is that although the book is not specific to vegetarian cooking, it shows you how you can make most of the recipes to be either vegetarian or non vegetarian. Hope you'll enjoy this book as much as I have!

go to www.allrecipes.com. This is one of the best websites around. There are thousands of recipes that are rated by people that have actually tried them. You can also scale the recipes up or down depending on the size of your family. It is an easy to use website. I also agree that the slow cooker can be a lifesaver- also, I grill fish out a lot in the summer, it is so good to introduce kids to fish at an early age. Grilling it means your house won't stink up!

I love kraftfoods.com. They have lots of simple and healthy snack and meal ideas. One thing I like that they have is Shop once, eat all week. They provide you with a grocery list for everything you'll need and then recipes for Monday-Thursday and then you have pizza on Friday.

Hi, L.. I just cook for myself and 7-year-old, who's picky and doesn't like to eat much. I never go all out with dinner. I make a lot of crockpot meals - stew or roast. All you have to do is put everything in the crockpot that morning and it's ready that night. You can make anything with groundbeef (or turkey) real fast if you thaw the beef or turkey ahead of time. Then you can make pizzas really fast and easy at home (then you control what goes on them, including what and how much cheese). Sometimes I make bagel pizzas from bagels I buy at the store (or a bakery). You can also pop a can of croissants, roll the dough out so it's rolled off your baking sheet, stoneware, or foil; put the sauce, cheese, meat, veggies, etc on the largest part of the dough that's on the stoneware; pull the dough hanging off the ends over the filling and tuck under; and bake according to croissant directions. I learned that at a Pampered Chef party. I've made it. Tastes pretty good! Those are some ideas I have! Good luck!

I have a 2 and 4 year old and it always seems their cranky time of day is from 4:30-5:30pm when I am trying to make dinner. I have found a few tried and true recipes that have helped me get through that time of the day and still get a healthy meal on the table.
chicken quesadillas - I usually make extra chicken breats when we grill. The chicken can be in the frig for a day or two or you can cube it up and put in your freezer until you are going to make the quesadillas. The key is having chicken already cooked and in my frig. I put a very thin coat of butter on wheat tortillas, put it butter side down in a pan and add some of the diced chicken, shredded cheese and any veggies your son might like, place another tortilla on top, let it brown lightly on each side. My kids don't like sour cream but love dipping their quesdillas in salsa. I serve it with lettuce, tomato, a side of spanish rice and corn. My boys love the rice but usually try and stay clear of the tomatoes and lettuce. The triangle cut shape of the quesdilla is easy for them to pick up and eat.
