bored. need inpiration. grocery shopping tonight and have no spark. What does your menu plan for the next several days look like? Maybe I can snag some ideas from yall.

Easy, lazy cheap:

1 box uncle ben's long grain and wild rice, fast cooking
1 (1lb) beef sausage
1 green bell pepper

Cost you $5, takes 10 minutes to cook and prep and everyone will love it!

Cook your rice, cook the sausage in a frying pan with a little water in it, then slice into 1/4 thick slices, dice up the pepper (without the seeds, obviously), mix it all together, done and YUM.

Homemade pizza - thanks Rachel for your recipe. Making pizza again this weekend!

Tonight: enchiladas with green sauce (not tomatillo, but green chile)

Next night: Chili dogs

Another day: my weekly "sausage rice and beans" - 1 pkg Eckerich sausage, onion, jalepeno sauteed in a pan. Add two cans of black beans. Serve on top of rice. Add carrots, peas, bell pepper, if you want more veg in it.

Last night I made split pea soup with leftover ham I had that didn't taste all too good. In the soup it tasted fine.

Last night we had a London Broil (just heat and eat from Sam's Club) with fresh steamed broccoli and carrots w/ fresh corn and a red baked potatoe (no butter) and small salad.
The night before Tilapia just lightly seasoned with salt/pepper pan seared with some olive oil, fresh steemed veggies and a glass of wine (15 min!)
Tonight Chicken Sausages, with pasta and a side salad (just add wine!)

Making the man a giant tray of lasagna tomorrow. I make two and stick one uncooked in the freezer. Going to the lake Sunday, supposed to be sunny and 75, probably do sausage and peppers on the grill and possibly chicken thighs, and a salad.

Tonight : Osso Buco & Leek mashed potatoes & lacinate kale
Tomorrow : French onion soup & sammies
Saturday : no idea as yet :)... I take that back Carne Asada and fried bananas
Sunday though, I'm clueless

whoops... and all red meat next couple days??? better check the tampon supply!

Tonight I am going to a Volleyball game my niece is playing so I am picking up "Whataburgers".

Tomorrow night I am going to a "Mini Class reunion Happy hour" and then straight to a football game my nephew is palying.. so I will be eating at the place where the Happy Hour is.

Tonight: Pizza
Tomorrow: Girls spa night at my house! Creamy chicken chili, homemade bread, apples and dip, homemade truffles
Saturday: Swedish meatballs, mashed potatoes and green beans with basil and cherry tomatoes
Sunday: Baked chicken, curried rice, spinach salad
Monday: Chicken enchiladas
Tuesday: Burgers, baked sweet potatoes, salad
Wednesday: Soup and sandwich -it's kids stuff at Church so it's got to be easy! :)

Thanks for the motivation to make a menu! Now I know what to shop for too! Although........I always forget my list at home and have to wing it.

Homemade meatballs/sauce. Everyone loves them and the leftovers freeze well. Serve 'em over spaghetti or put them on rolls & broil some mozz cheeze on top!

Tonight: roasted chicken breast w/sweet potato fries & broccoli

A couple nights ago: buttermilk blueberry pancakes & sausage. Leftover pancakes also freeze well if placed between sheets of wax paper. Then I nuke them for a quick breakfast for the kids.

Tomorrow we'll go out to eat.
