i just wanted to say a huge THANK YOU to each of you who gave away the secrets of a delicious little thanksgiving side dish. i have not decided which one i will use for this years dinner but willet you all know thanks again

Hello H.,

I have a great recipe that you may or may not want to use the marshmellow with. I have a son with severe food allergies, so I am always trying new things to make his food taste good and resemble what everyone else is eating.
I microwave the potatoes for 3-5 minutes each or boil them until soft. Scoop the contents from the skin into a bowl. I then add margarine or butter, brown sugar, and cinnamon (all to taste). Stir, and serve warm. I guess you could lessen some of the brown, sugar and do a layer of marshmellow on top:)

Here is a link to a recipe for sweet potatoes that my family likes even better than the ones with marshmallows.

The alcohol bakes out so no worries there. Otherwise, you can just pour butter and brown sugar over sweet potatoes, top with marshmallows and bake for 15 or so. I don't actually have a recipe, just 'wing it' on this one. Good luck!

Hi. this is the recipe i use. You can use canned sweet potatoes which makes it alot easier. This is a great hit for my thanksgiving dinners every year! The recipe doesnt call for marshmallows but I always throw them on top before baking.

Sweet Potatoe Casserole
2 1/2 pounds sweet potatoes (about 3 large), scrubbed
2 large eggs, lightly beaten with a fork
3 tablespoons unsalted butter, melted plus more for the preparing the pan
2 tablespoons packed dark brown sugar
1 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Pinch of freshly grated nutmeg
Freshly ground black pepper
1/4 cup coarsely chopped pecans

Preheat the oven to 400 degrees F. Put the sweet potatoes on a baking sheet and pierce each one 2 or 3 times with a fork. Bake for 45 to 60 minutes or until tender. Set aside to cool.
Turn the oven down to 350 degrees F. Scoop the sweet potato out of their skins and into a medium bowl. Discard the skins. Mash the potatoes until smooth. Add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg, and pepper to taste. Whisk the mixture until smooth.

Butter an 8 by 8-inch casserole. Pour the sweet potato mixture into the pan and sprinkle the top with the pecans. Bake for 30 to 40 minutes until a bit puffy. Serve immediately.

I make them two ways one with the caned Yams put them into a baking dish sprinkle alittle brown sugarand some aplle juice about a TBSP and bake for 30 minutes at 350 then sprinkle with marshmellows and put back in oven until marshmellows are melted a bit. The other way is to peel sweet potatoes and cut into chuncks put in baking pan with butter,brown sugar and alittle apple juice. Cover with foil and bake for 1 hour take off foil and add marshmellows and return to oven till marshmellows are soft and melt. Hope this helps you we all think it is yummy. Happy Thanksgiving!!

Mine are a little different, I think. I take whole fresh sweet potatoes and pierce them and toss them in the oven and bake them. This is great because you can squeeze them in alongside the turkey. 2 or 3 good sized ones for a small casserole. Take them out when they're soft, let them cool awhile, then split them and scoop the potato out and put it in your casserole and mix in some butter. You can fork-mash them a little if you want smoother. I don't measure anything, just put some more butter, brown sugar, and marshmallows on top and stick them back in the oven when you get the turkey out, and just let them brown.

Another alternative is to put it in a pie shell and make sweet potato pie, open faced with the marshmallow on top.

Hi H.

I learned this from my grandmother when she use to make this for thanksgiving.

the recipe depends on how much your going to be serving..

But I'll give you the ingredients.

8 sweetpotatoes(wash and boil them with the skin on so that when they are fork tender you can just peel off the skin)
1 ts of vanilla extract
1 ts nut meg
1 ts cinnamon
2 cups milk
3 eggs

when the potatoes are fork tender let them cool. When they are cool you can put them in a mixer if you dont have a mixer you can use a wire wisk to mash the potatoes.
once potatoes are mashed add the rest of the ingredients.
you can use a cassarole dish to add the mixture in.

Bake for 30min at 350 degrees until potatoes are firm.
Once the potatoes are firm add the marshmellows(mini marshmellows work the best) Place the potatoes back in the oven until marshmellows are brown..

I hope this helps.. Let me know how it turned out.

P.S. you can use the same recipe minus the marshmellows for sweet potatoe pie...

Mallow-Topped Sweet Potato Bake

30 JET-PUFFED Marshmallows, divided
1/4 cup (1/2 stick) butter or margarine
1 tsp. ground cinnamon
3/4 tsp. salt
3 cans (15 oz. each) sweet potatoes, drained

PREHEAT oven to 350°F. Place 6 of the marshmallows, butter, cinnamon and salt in medium saucepan; cook on low heat until marshmallows are completely melted and mixture is well blended, stirring frequently. Place in large bowl of electric mixer.
ADD sweet potatoes; beat with electric mixer on medium speed until well blended. Spoon into lightly greased 1-1/2-quart baking dish; top with remaining marshmallows.
BAKE 15 to 20 minutes or until sweet potato mixture is heated through and marshmallows are lightly browned.

Whipped Sweet Potato Bake
3 cans (15 oz. each) sweet potatoes, drained
1/4 cup (1/2 stick) butter or margarine, melted
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
24 JET-PUFFED Marshmallows (about 3 cups)

PREHEAT oven to 350°F. Beat sweet potatoes, butter, cinnamon, salt and nutmeg in medium bowl with electric mixer on medium speed until well blended.

I love to cook, so here goes! Oh,always remember to season to your taste.

*I use whole yams,boil them a little first.
*let them cool a lil,then peal them.
*then slice them in silverdollar like slices, then cut them into 4's.
*puree 1/4 of them with a 1/2 cup of brown sugar,1 stick of butter,cinnamon & a little water.
*place the yams in a large baking pan,pore on the puree(not to much water)& then pile on the marshmellows!! *bake a little(5 minutes).
