My mother-in-law is bringing the turkey (thank goodness) but I'm hosting Thanksgiving. I HATE to cook so it's a big joke in the family that I'm the only one who "can't" cook. I need some fun recipes for appetizers they can pick at before dinner, side dishes, and dessert. There are websites galore but they are so overwhelming!! Thanks for sharing your tried-n-true favorites!!

So What Happened?

Thanks for all of your recipes-- I hope other people can use these ideas, too. Just to clarify, I hosted Thanksgiving last year, too, and it went just fine. My MIL brought the turkey last year, too, and other relatives all came with a dish or 2 and I didn't have to cook very much. There will be less people to bring a dish this year so I am going to need to make a couple of extra sides-- not a big deal, really. I'm not the kind of person who feels it's necessary to try to impress people or being something I'm not. I've been a part of my husband's family for about 12 years now so they know what to expect from me!

My best friend used to sell tastefully simple stuff. It really is simple to make. Look at tastefullysimple.com and you can buy the mixes on there. Their beer bread is great. You can make the spinach and herb dip to go along with it and people can pick at that before the meal.
Set out a bowl of mixed nuts.
I own a Pampered Chef business so I've got tons of recipes for appetizers, desserts, etc. Feel free to email and I'll see what I can help with.

I have a great cheesy green bean casserole recipe if you want it. It doesn't taste ANYTHING like the original. Awesome, even my kids inhale it. My neighbor too and she doesn't even like green bean casserole.

Here are some great ones-we have a family of Southern cooks! They love to cook and are excellent at it!

Banana Pudding
2 boxes vanilla wafers
6-8 large bananas
3 large boxes vanilla instant pudding
1 large cool whip or 6 egg whites
with 1 c. sugar & 1 cap vanilla

Banana Pudding Pie
1 box vanilla wafers
3-4 large bananas
2 large boxes vanilla instant puddin
1 cool whip container
1-2 nilla wafer pie crusts


Layer as follows: cookies, bananas (sliced in thin circles), pudding, cookies, bananas, pudding, etc... until full almost to top. Top with cool whip or merangue. Merangue: Place egg whites in a stainless steel or glass bowl and mix on high speed until fluffy. Next, Add sugar gradually while mixing. Add vanilla. Mix only for about 1 minute. Top banana pudding and bake on 350 ° until lightly browned. (Do not bake if using cool whip)

Best Ever Sweet Potato Casserole (A favorite of all)
2 cans 30oz. sweet potatoes in syrup
-drained
3 eggs
1 c sugar
1/2 c milk
2 tsp vanilla
Topping:
1 c brown sugar
1/2 c flour
1/2 c melted margarine

Mix all ingredients in a bowl (except topping ingred.) with a mixer; pour in a casserole dish or 9x13 in. pan. Topping: Mix and spread on top of sweet potato mix. Bake at 350 ° for 1 hour. Crust will be crunchy and yummy!

Banana Bread
2 c self-rising flour, sifted
1 c sugar
1/2 c butter
2 eggs
2-3 bananas, mashed

Mix all ingredients together. Coat (thin) loaf pan(s) with butter and sugar. Pour in batter. Bake at 350 ° for 50 minutes.

Crunchy Apple Dip
2 (8oz) pkgs cream cheese, softened
1 1/4 c brown sugar
1/2 c sugar
2 tsp vanilla
12 oz can pineapple juice
4-6 granny smith apples, washed
-peeled, sliced
8oz pkg toffee bits, crushed

In a bowl, mix cream cheese, brown sugar, white sugar, and vanilla. Cover and refrigerate. In bowl, cover sliced apples with pineapple juice and place in fridge overnight. When ready to serve, blend toffee bits into cream cheese mix with a mixer. Take apples out of juice and serve with dip. Caution: Addictive :-)

Real Homemade Cornbread Dressing
1 whole chicken
salt and pepper to taste
butter
2 cans squash
1 big can cr. of chicken soup
1-1 1/2 tsp sage
Corn Bread:
3 c self-rising flour
3 c cornmeal (white lily)
4 eggs & chopped sweet onion
1 tbsp mayonnaise 2 tbsp sour cream
milk

Cook chicken-boil in water with salt, pepper and butter. Cool and pull chicken off of the bones. Shred. Set aside. Heat oven to 450 ° .Corn Bread~mix flour, cornmeal, eggs, onion, mayo, sour cream, and mix with milk (estimate amount). Heat oil in extra big iron skillet on stove to high. Sprinkle a little cornmeal in pan. Pour mix in skillet for 1-2 minutes. (should sizzle a good bit). Move to oven. Cook to brown on top for 30+ min. Cool. Break up in a big casserole pan. Add: squash, cream of chicken soup, shredded chicken. Add juice from chicken boil to mix til not soupy, but not dry. Add salt and pepper to taste. Add sage. Cook 40-50+ min. Can be frozen.

Potato Salad
6-8 lg white potatoes, peeled/cut 1"
med onion, finely chopped
1/3 c dill pickle chips, salad size
1 c mayonnaise
1/2 c mustard
1/2 c chopped celery
salt and pepper to taste
dash of paprika

Boil potatoes to fully cooked and soft. Drain. Mix all ingredients well. Garnish with paprika = serve warm.

Homemade Chicken and Dumplings
2-3 chicken breasts
4-5 c self-rising flour
1 can cream of chicken soup
1 stick butter -milk to mix
1/2 c wesson canola oil
salt to taste
pepper to taste

In a large pot boil chicken, butter, and cream of chicken soup for approx. 1 hour. Make sure to keep plenty of water to have a pot full of broth. Salt and pepper while cooking. While chicken is cooking, put flour and oil into a large bowl and mix completely-use your hands. Pour in enough milk to make a buscuit like texture -put aside until chicken is done. Remove chicken and de-bone, cut into small pieces. Dump out dough onto a floured flat surface, use roller to make as (thin) flat as possible, cut into strips and drop into (rolling boil) broth-dunk, do not stir. Add chicken and cook for 40 min on med. heat once all dough is used. Gently stir after dumplings firm up to keep from sticking. Can freeze.

Egg Custard Pie
3 c whole milk
4 eggs
1 tsp vanilla flavoring
1 c sugar
1 tbsp flour
pie crust

Slightly beat eggs. Add milk and vanilla. Mix sugar and flour; add to milk mixture. Place in crust. Sprinkle nutmeg on top if you like. Bake at 400 for 15 min.; turn down to 375 and bake for 40 min.

Hawaiian Chocolate Chip Cookies
1 c shortening
3/4 c sugar
3/4 c brown sugar
1 egg
1/8 tsp salt
2 c quick oats
1 c semi-sweet chocolate chips
1 tsp vanilla extract
1 1/2 c flour
1 tsp baking powder
1 tsp baking soda
1 c shredded coconut
1 c macadamia nuts, chopped

Beat shortening and sugars til light and fluffy. Add egg and vanilla; beat well. Sift flour, baking powder, soda, and salt; gradually mix into shortening and sugar mix. Stir in remaining ingredients. Shape into 1 ½ inch balls and place on ungreased cookie sheet. Flatten with bottom of glass dipped in flour. Bake at 325 ° for 15 min. or til lightly browned.

Sweet Potato Crunch Recipe #53424
A good desert for Thanksgiving in replace of pumpkin pie.

1¼ hours | 45 min prep

SERVES 12 -14

Crunch Mix
1/2 cup dry milk (Carnation)
1 cup flour
1 cup sugar
1/2 cup real butter
1/2 teaspoon nutmeg
1/2 cup real butter (for topping)

Filling
6 large sweet potatoes (not yams)
1/2 cup real butter
1 cup sugar
1 teaspoon mccormick vanilla butternut flavoring

Preheat oven at 375 degrees F.
Mix the first 5 ingredients in a food processor like cornmeal and put aside (Make sure this is cold so it turns crumbly).
Bake the sweet potatoes until they are soft (It's better to bake than to boil, since it keeps the vitamins and color).
Peel and beat with a mixer in a large bowl (this will remove the strings from sweet potatoes, so discard when strings show).
Add in sugar, butter, nutmeg and extract and mix well.
Put in 13" x 9" pan.
Top with dry mixture.
Chop last stick of butter and put the pats on top of crumble mixture (this will make the topping golden brown).
Bake for 20 minutes or until golden brown.

One of my favorites is bacon wrapped smokies (little sausages). Ingredients are smokies, bacon, light brown sugar, and toothpicks.

#1. Cut bacon into appropriate size (large enough to overlap the sausages and place toothpick into hold it in place)
#2. Follow step one until all sausages are wrapped.
#3. Place all sausages in pan and sprinkle the light brown sugar all over the tops of the wrapped sausages.
#4. Place in 350 degree oven and cook until bacon is done and sugar is melted.

Hint: The meats create a lot of juice so about 1/2 through the cooking I would pour some of the juice out and sprinkle more brown sugar over them, and continue to cook..

Ok this is a tried and true cran-apple cranberry sauce. For me it is always a HUGE hit with my husband’s family…And it is even better if you can make it 1-2 days ahead so it gets to chill and gell nicely.

Ok Get 2 bags of Fresh Cranberries (should feed 8-10 people plus a little for leftovers)
2 red delicious apples (peel and dice to about the size of a sugar cube or smaller)

You probably already have the other 3 ingrediance
¼ tsp cinnamon
½ of a cup MORE than the recipe on the bag calls for of sugar
1 cup MORE water than the recipe on the bag calls for

Rinse the cranberries in a strainer and take out the few ugly ones. Next get a pot large enough to hold everything and a lid is nice too. Then Put all the ingrediance from the recipe on the back of the bag calls for (don’t forget to multiply that times 2) plus my extra ingrediance (no need to multiple with those). Cook it over medium high heat until it starts to boil, stir occasionally. Then once it is boiling and the cranberries are starting to “pop” continue to stir and lower the heat to medium and let it go for a good 20 minutes. Once most of the cranberries are popped and the liquid should be gelling up some, use your potato masher and mash it a few times, 5-8 or so just to help break up the few cranberries that haven’t popped yet. Stir well and lower again and cook for 10 more minutes. Remove from the heat and you can place it in a nice corning wear dish, put the lid on and pop it in the fridge, Until you need it just stir before serving and poof done!

Also I would recommend a trial run of anything thing you plan to cook just incase you have to tweek any recipe to your taste...Like I add extra sugar and water for sweetness and more gell…

Polish Mistakes: (VERY simple). mix/cook ground hamburger & ground sausage, add velveeta. (play around with how cheesy you want it). cut bread in quarters. place clump of mixture onto bread. on a cookie sheet, cook in oven on 350 until bread is toasted. You can also freeze these prior to the bread being cooked for future use. Trust me, they're delicious and ALWAYS a hit. I think the sausage adds a special flavor that taste like more seasoning than really is in there.

side dish--corn pudding casserole (i make this alot on holidays)
Recipe for corn pudding casserole:
2- 1 lb cans cream corn
2- l lb cans whole kernal corn
1 sick butter
1/2 cup self rising flour
1 cup milk
4 eggs
salt to taste

directions:
1. mix flour and eggs (mix well)
2. heat butter and milk
3. mix butter and milk with corns
4. mix all ingredients together and stir well
5. put in a 2 quart casserole dish and bake at 350 for 45 minutes.

appitzer-- pigs in the blanket
1 or 2 packs of little smokies (they are usually by the hot dogs, or keilbassa sausages.) they are little tiny sausage looking hot dogs.
and a package or 2 of the cresants you get in the canned bisquit section.
take the creseant and unroll and you can take one trangle of the cresant and usually cut into three pieces so it will do 3 little smokies.
wrap a piece of the cresant dough around a little smokie and lay them on a pam sprayed cookie sheet.when all done bake until golden brown. serve with a spicey mustard of some sort.

side dish: sweet potatoe casserole:
2 lb can sweet potatoes
1/4 cup brown sugar
1/2 tsp salt
1 can (8 oz) crushed pineapples
1 tlbs. packed brown sugar
1 tlbs. butter or margarine
1 tsp. water
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 1/2 cups minute marshmellows
1/4 cup chopped pecans

directions:
mash together sweet potatoes, brown sugar, 1/4 cup melted butter and salt.mash till no lumps remain.mix in the pineapples.
microwave for 2 minutes. stir and set aside.
in a small microwavable bowl mix 1 tlbs. brown sugar, 1 tlbs. butter, water, cinnimon, nutmeg, microwave 1- 1 1/2 minutes, stir at 1/2 time. add marshmellows and microwave 2 to 2 minutes. put on top of sweet potatoes. then sprinkel with pecans. heat in microwave if necessary to get potatoes warm.

take a package of johnsonville lil "weenies" heat them up in a frying pan with bbq sauce.
when they are warmed put them on a toothpick with grape tomatoes, and cheese cubes. and viola...

Here is a very good dip to use with tortilla chips, plus it is easy to make. Get a small block of Philadelphia cream cheese then heat 1 can of Hormel turkey chilli with beans, pour over cream cheese and serve with chips.

My children also enjoy apples with carmel dipping sauce or apples with cheese slices.

If you do not like to cook, I have a very easy recipe for you. Chili Cheese Dip

1 bar cream cheese
1 can hormel chili with beans (i prefer the "hot")
2 cups sharp cheddar cheese

In a square pyrex smooth out the cream cheese to cover the bottom evenly. Next pour the can of chili and top with 2 cups cheddar cheese. Heat in microwave 4-5 minutes and it is ready to serve with Tostado chips (I prefer "scoops").

The is the favorite appetizer of all the men in my family!

Cheesy potato casserole. It is SO easy to make and delicious. Even if you don't use it for thanksgiving, you have to try it.

One package frozen shredded hashbrown potatoes
One big package shredded cheddar cheese (the biggest one - I think it is about 3 cups)
One can cream of potato soup
One 16oz container of sour cream

Mix it all together, but reserve 1/3 of the cheese for the top. Spread in a greased 13x9 glass pan or a round 2.5 quart casserole. Top with remaining shredded cheese. Bake at 350 for one hour.

It is dee-licious and a fan favorite in our house.

This is super easy and no cooking involved. My husband's favorite! You need celery, cream cheese, chopped walnuts and sliced green olives. Stir the walnuts and olives in with the cream cheese and then spread them into the celery sticks after you've cut them. I never measure I just stir them in until I think it tastes good. It's a great appetizer and the men will eat them up while they watch football all day. Good Luck!

here's a few for you that are quick, easy, inexpensive and an absolute favorite with everyone!!

sweet potato casserole
2 40oz large cans sweet yams or 8 fresh sweet potatoes
1 tablespoon cinnamon or pumpkin pie spice
3/4 cup brown sugar
2 cups frosted flakes cereal
1 stick butter
1 package of either large or mini marshmallows
1 bag walnuts or pecans (they can be whole, halved or pieces)

for fresh sweet potatoes, peel them, then cut into medium sized cubes, and then boil until very tender. drain and put into casserole dish and mash them, stir in 3/4 of the bag of marshmallows, then top with the remaining 1/4 bag of marshmallows (but don't stir those in). for canned yams, drain and put into casserole dish and mash them, stir in 3/4 of the bag of marshmallows and then top with the remaining 1/4 bag of marshmallows (but don't stir those in). in medium sized bowl, melt butter in microwave, at least 1 minute, then add cinnamon or pumpkin pie spice, nuts, and brown sugar to the melted butter. stir together ingredients. then add frosted flakes to mixture and stir again. add those ingredients on top of the of the yams. bake in oven on 350 degrees for 35 minutes. serves 6-8

corn bread casserole
2 boxes jiffy corn bread mix
6 slices velveeta cheese
1 cans sweet cream corn
1 cans sweet regular corn (drained)
1 stick melted butter

follow directions on box for the cornbread mix. then pour into casserole dish. add melted butter, drained regular corn and creamed corn. stir together ingredients. layer slices of velveeta across top of ingredients. then with a fork, press down on all the cheese slices until they're all submerged in the dish. bake on 350 degrees for 25-35 minutes. serves 6-8

potato casserole
8 oz sour cream
8 oz jar cheezwhiz
1 can cream of celery soup
2 bags frozen shredded hashbrowns
1/2 cup onion
teaspoon salt/pepper
1/2 cup butter
2 cups cornflakes

in large bowl, stir together all the ingredients except for the corn flakes and only add 1/4 cup butter. put into large casserole dish. bake 400 degrees for 30 minutes. take out of oven and add cornflakes and drizzle remaining 1/4 cup of butter over the cornflakes and return to oven at 400 degrees for another 30 minutes.

broccoli casserole
4 packages frozen chopped broccoli
2 teaspoons garlic salt (i use garlic powder and salt mixed)
2 eggs
1 cup mayonnaise
2 cans cream of mushroom soup
2 small chopped onions
2 cups bread cumbs (italian flavored is best)
2 cups shredded cheddar cheese

cook broccoli with garlic salt or steam broccoli by itself, drain after cooked. in large mixing bowl, add garlic powder, salt, eggs, mayonnaise, soup and onions. stir well. add broccoli to mixture and stir well. pour into large casserole dish, then add cheddar cheese over top of mixture. cover cheese with the bread crumbs, making sure the entire area is covered with the bread crumbs. bake 350 degrees 30-40 minutes or until top browns and cheese is melted. serves 6-8

First, let me just say: Tammi, you are a brave, brave woman for hosting Thanksgiving.

Personally, I'm of the mindset that a major holiday is *no* time to try a new recipe (which could fall flat), but that doesn't mean you can't put out a great spread!

As an avid fan of Rachael Ray's magazine, I seem to remember that last year, they had a panel of tasters rate the best (store-bought) Thanksgiving dishes. As stuffing goes, they agreed that Stove-Top tasted as good or better than made-from-scratch. The same goes for Stouffer's creamed spinach-- that's two sides and tons of time saved!

If you do home-made apps and desserts a day or two before, you can spend the big day enjoying your family and *really* impressing them by staying cool and cheerful. ;)

3-ingredient sausage-stuffed mushrooms (http://allrecipes.com/Recipe/Sausage-Stuffed-Mushrooms-II...) are one of my fave hors d'oeuvres, and can be made up the night before. Just bake them off as your guests arrive, and line them up with a veggie tray, maybe some mini-quiches, or some "crab"-stuffed (http://allrecipes.com/Recipe/Imitation-Crab-Salad/Detail....) snow peas pods, you could be done with the first course in under 30 minutes! (I *did* say I liked Rachael Ray.)

For dessert, if you can't get any help from the other guests, I'm going to urge you to knock their socks off with a trifle-- (http://www.rachaelraymag.com/recipes/dessert-recipes/spic... of which banana pudding is one popular variety.

I'm sure you'll do great-- just don't be *too* great, or you'll never get out of it. ;)

This is not only easy to make but my family would not have thanksgiving with out it. IT IS CALLED JELLO PIE

YOU WILL NEED SMALL PK. CHERRY JELLO-8OZ. CREAM CHEESE.--TOPING LIKE DREAM WHIP THERE IS A CHEAPER ONE IN A CAN. GRAHAM CRUST--JAR CHERRYS- DESOLVE JELLO IN ONE CUP OF THE CHERRY JUICE.PUT IN FRIG. UNTILL IT BEGANS TO SET THEN ADD CREAM CHEESE BEAT WITH HAND MIXER UNTILL JELLO AND CHEESE WELL MIXED. CHOP FINE ONE CUP OF CHERRYS ARE WHAT YOU HAVE ADD TO MIXTURE. ADD THE DREAM WHIP AND MIX WELL PUT IN CRUST. LET SET IN FRIG, OVER NIGHT YUMMIE.

I GET MY CHERRYS AT THE DALLOR STORE AND CHOP THE WHOLE JAR AFTER USEING THE JUICE. YOU CAN;T HAVE TO MUCH. YOU MAY ALSO USE ANY JELLO AND USE YOUR OWN IDEA. I USED LEMON ONCE AND LEMON JUICE TO DESOLVE THE JELLO BUT I HAD TO USE LOTS OF SUGAR. DON;T FORGET TO BOIL YOU CUP OF LIQUID TO DESOLVE JELLO.YOU CAN PUT REST OF DREAM WHIP ON TOP BEFORESERVING.

Hi Tammi- For a side dish you may try this Zucchini I came up with one night. Clean and cut zucchini stems off. Then slice length ways and lay with flat side up in one layer in pan. I usually make 1/2 large or 1 (2 pcs) small per person. Mix equal amounts of plain bread crumbs and grated pecorino romano (about 1 cup each for 4-5 zucchini) Add olive oil a little bit at a time and stir with fork until crumbs are fully moistened with oil. They should just slightly start to stick together. If you want, you can brush the zucchini with pureed garlic first. Top with about 1/2" crumbs. Bake 15 minutes covered in 350 oven, uncover and bake until golden brown.

Also, an easy and very gourmet alternative to regular biscuits, etc. Buy frozen puff pastry. Thaw and unfold. cover generously with crumbled goat cheese. Roll dough like jelly roll and then slice every 1" or so. Lay flat to bake. Bake 350 for appx 15 min or until golden and cooked in center. Make a few extra, these puppies are goooooood for snacking in the kitchen if you like goat cheese. You can also make these in bread stick form by folding the dough in half after adding the goat cheese, slicing 1" wide ribbons and then twisting before baking.
