I would love to hear from any of you who make delicios Tortilla soup..... What are some really good recipes you use? I was thinking about making this for dinner tonight! Please let me know how yall make it!!!

I have a super easy and delicious recipe:

4 chicken breast halves - boneless
1 garlic clove minced (I've used dried minced garlic and it's been fine too)
2 Tbsp margarine
2 14.5 oz cans chicken broth
2 14.5 oz cans chopped stewed tomatoes
1 cup salsa
1/2 c chopped cilantro
1 tbsp ground cumin

Boil chicken until cooked then shred chicken with a fork. In bottom of pot, saute garlic in margarine. Add all ingredients to pot and heat. Top bowls of soup with tortilla chips.

Optional: place cheddar cheese cubes in bottom of bowl before adding soup.

Optional: Top soup and tortilla chips with a little sour cream.

Here is ours...I have a big family...this recipe rocks because you can use frozen chicken! Definitely try mine...it is so easy and doesn't sound that special...but just wait til you try it!

Tortilla Soup

2-3 lbs Chicken breasts
6 cubes Chicken bouillon to taste *
*I use the yellow and green box down the Hispanic aisle
6-8 Roma tomatoes
white onion
4 avocados
cilantro
1 jalapeno
cotija/cojita cheese- round, white Mexican cheese
4-6 limes
white corn tortillas
Canola oil
*Favorite Hot Sauce, if you like?

Boil chicken in large pan of water, skim off any fat from top of water. Add S&P and bouillon to taste. Shred chicken. Simmer til ready to eat!

Dice and chop all veggies. Onion and jalapeno very small. (my DH prefers green onions to white onion both are good) Crumble cheese with fork.

Cut tortillas in strips and fry in oil til golden brown.

Put veggies and cheese and tortilla chips in bowl, ladle in soup, add cilantro and squeeze of lime...and eat!

I put all ingredients in one of those veggie/dip trays (mine has a lid where I pile in cheese and cilantro) and let everyone make their own. This is super easy and a family favorite~the cheese is what makes this dish, it is so yummy! You can find it at any grocery store and at walmart/Winco

This one is awesome (if I do say so myself)!

Tortilla Soup
3 chicken breasts, cooked and shredded
1 onion, chopped
3 cloves garlic, chopped
2 T. olive oil
3 cans chicken broth
2 cans chopped tomatoes w/ jalapenos
1 t. chili powder
1 t. powdered cumin
1 can chopped green chilies
lime
cilantro
avocado
cheese
corn tortilla strips

Saute onions and garlic in olive oil. Add broth, tomatoes, chili powder, cumin, green chilies, and chicken. Simmer 15 minutes (or longer). Put baked tortilla strips, cheese, slice of lime in bowl. Spoon in soup. Add cilantro & avocado.

(for corn tortilla strips cut corn tortillas with pizza cutter in narrow strips and bake in 350 oven till crunchy)

This is a recipe circulated among my work group and often used for work lunches.

1 onion, chopped
4 oz can chopped green chilies
2 minced garlic cloves
1 large can diced tomatoes
1 can Rotel
1 pkg Ranch dressing mix
1 tsp cumin
5 cans beef broth
5 cans chicken broth
4 cooked chicken breasts, diced

Mix all together and simmer for 1 hr. Serve over tortilla chips, top with grated Monterey Jack cheese and diced avacados.

I just made a chicken tort. soup last night in the crock pot, so easy! Pound of chicken cut up, cooked. Add a pack of taco seasoning to the chicken. (the directions are on pack of seasoning) Put in crock pot, add one can V8, one can black beans (drained), one can of corn (drained), one jar of salsa. Mix it all together in crock pot and warm for 4 hours on high. I serve it with crushed up chips, sour cream and cheese on top!
