If you blanch the foods first (before it is mashed up) than freezing doesn't take too many nutrients away. Freezing the food for about 4 months is recommended in my freezer meal book for normal freezers. You just need to make sure you get all the air out to preserve freshness. Except potatoes tend to not freeze very well. Also, as you probabl;y know, don't refreeze thawed food, and don't freeze food that has been eaten out of, b/c bacteria will grow.
