Healthy School Birthday Snack

In a month I will be providing a classroom of first graders with a healthy snack on my son's birthday. I have one unique idea but would love to have some more to choose from. Please ladies put on your creative hats and send me a few ideas.

Home made personal size pizza using english muffins or the small tortillas

"Ants on a log" - celery sticks with peanut butter and raisins as the ants. Watch out for nut allergies though.

Spinach Brownies - yes there is actually a recipe out there for them. I found it in a magazine. Unfortunately I've moved since then and the recipe did not get into my recipe box. They didn't taste bad either. The only thing you have to watch out for is chopping the spinach fine enough so they don't find it. If you get a stringy piece of spinach it's a dead giveaway.

You could let them make healthy "sundaes" by making a parfait of yogurt and fruit.

I have sent mini muffins in the past and they were a big hit b/c they look like cupcakes! Also I have seen a trail mix/ or snack mix served in cupcake liners.

Ants on a Log -

Celery Sticks
Cream Cheese
Raisins

Spread cream cheese on celery and creatively place raisins on the 'log' posing as ants... Used this for a class myself and everyone seems to love it.

Do you have the The Sneaky Chef cookbook? She purees fruits and veggies into dishes to make them more healthy and your kids don't even know that they are eating good stuff. There is a recipe for Choc-ful cupcakes with Incredibly Improved icing. It's good!
