OK Mamas, what are your go to soup recipes? I recently made a leek and cauliflower soup that was good. We love cheeseburger soup and chicken soup with a little spice to it. What do you guys love? Thanks!

I have a very easy taco soup recipe that we have enjoyed... very quick and easy!

1 lb ground beef
1 can pinto beans (15.5 oz)
1 can whole kernel corn (15.25 oz)
1 can green beans (14.5 oz)
1 can ranch beans, undrained (15 oz)
1 can stewed tomatoes (14.5 oz)
1 can beer (I rarely used beer... just added 1 1/2 C water instead)
1 10 can tomatoes and diced green chiles (like rotel)
1 envelope taco seasoning mix
1 envelope ranch style dressing mix.

Cook ground beef and drain it. Rinse and drain pinto beans, green beans, and corn. Stir pinto beans and the rest of the ingredients into the pot, bring to a boil. Reduce heat, simmer 30 minutes.

I used to double this recipe... so yummy and easy! If you want, you can add chopped onion, garlic, whatever.

I serve with tortilla chips and shredded cheese if anyone wants to put cheese on their soup.

This basic recipe was in the Southern Living magazine way back in the late 90's.... a friend photocopied the recipe and gave it to me... it has held a place of honor in my kitchen since then.

my family loves,loves, loves sausage corn chowder

1 pkg pork sausage
1/2 onion (diced)
1 can evaporated milk
1 c. water
4 c. peeled and diced potatoes
1/2 tsp. pepper
1/8 tsp salt
1/2 tsp oregano
1 can drained whole kernel corn
1 can undrained cream corn

fry sausage and onion together until no longer pink, drain. Return to pot, add water, milk, and potatoes. Cook on med. heat until potaotes are tender. stir in salt, pepper, and oregano. Add cream corn and whole kernel corn. Cook additional 10 min. over med heat.

SO yummy and quick!!

My fave and the family loves it too - I've tweaked from an old recipe for vegetable beef soup:

About 1/2 a bottle of tomato juice
1 small (I think 4 oz) cans tomato paste
Browned ground beef 1lb
Chopped onions and green pepper
A bag of frozen corn
A bag of frozen okra
A can of chicken broth

Bring it to a boil and let it simmer for a little bit - soooo tasty!

A great cookbook is "A Year of Monestery Soups" - we received it as a wedding gift and it's fantastic!

Spicy Lentil Soup! It's warm and comforting on a chilly winter day....

Recipe: Curried Lentil Soup

This hearty soup, very warming for winter days, is best made the day befoer to allow the flavour of the spices to infused

Ingredients:

30 mililiters Vegetable oil
1 large Onion chopped
2 large carrots chopped
2 sticks celery chopped
1 clove Garlic crushed
7 mililiters Curry powder
1 mililiter Ground cumin
1 mililiter Ground coriander
1 liter Chicken Stock
30 mililiters Tomato paste
100 grams Red lentils washed
3 large Potatoes grated
Salt and cracked pepper

Preparation:
1 Heat the oil in a large pan, add the onion, carrots and celery and fry for 5 minutes, stirring frequently.2 Add the garlic, curry powder to taste, cunin and coriander, and fry for an additional 2 minutes, then poru in the stock followed by the tomato past lentils, grated potatoes.3 Bring the soup to the boil and simmer for 30-40 minutes, until the lentils and vegetables art cooled. Season generously to taste before serving with hot chapatis for an authentic Asian dish

Meatball Soup:

a bag of frozen meatballs, reheated in microwave
2 bags of frozen vegies, your pick/your mix
1 jar of spaghetti sauce + 2 jars of water
1 can of beef broth
Italian seasoning, S&P to taste
minced garlic (or garlic powder), to taste
a few red pepper flakes, if desired

This is my quick & easy soup recipe. From freezer to dinner table, it takes < one hour. I have also been known to crockpot it, with still-frozen meatballs. Sometimes I add cooked pasta or rice to it. Sometimes I add sliced polish/cajun sausage to it, too.

I serve it with any/all type of bread/rolls/etc. It's also excellent in bread bowls. Sprinkle some parmesan on it, or some shredded Italian cheese. Lemon pepper is also good on it (& in it)!

Veggie soup: dump a bunch of veggies (doesn't matter what kind) into a pot with enough chicken or vegetable stock to cover, add salt and pepper to taste, boil until veggies are all tender and mushy, then use a stick blender to puree the soup until creamy and smooth. Add whatever herbs you like. This recipe couldn't be simpler or more healthy. And MY kids LOVE IT! They've been known to choose a cup of this soup for a snack instead of something sweet!
