Easy Idea for Casserole for Work Party.

My hubby needs me to make a dish for Thurs for his work lunch party. I was going to make a cornbread casserole but not sure yet. I want to make something easy and something that most people will eat. Also I want it to look like I can cook and not just throw something together or go and buy something so next time they will ask him to bring something again. I am an all right cook but no good on the fancy stuff. If you have any ideas that are easy and dont break the bank to make please let me know. Thanks!

I was also going to suggest a pasta salad. I just got back from the store to make one for my husbands work party on Fri. I cook 2 bags of tri-colored spiral noodles, drain and rinse. Place in big bowl (something with a lid) and add half a bottle of Italian dressing, one or two cans of sliced olives, some cherry toms, and shredded parm. Mix. Ref over night. In the morning add the rest of the dressing and top with more parm chz (the noodles soak up most the dressing so need to add more for flavor). I have added slice pepporoni as well.

Kids love this as well.

My husband has a great recipe. He calls it "Pizza Pasta." You can use any type of noodles (spaghetti, macaroni, ziti, etc). Here's the recipe:
Cook and drain the noodles
pour into casserole dish (we make a bunch so we use a 13x9)
pour a jar of spaghetti sauce over and stir in
add pizza toppings of your choice (pepperoni, hamburger, Italian sausage, Canadian bacon, bell peppers, onion, etc) as much or as little as you like.
Mix all together.
top with grated mozzerella cheese (or any other)
cover and bake at 350 for about 30-40 minutes until bubbly and cheese is melted.
My family loves it!!

Another favorite is "Burrito casserole" Buy the frozen burritos.
place in a 13x9 pan
pour chili over top
top with cheddar cheese and bake at 350 for about an hour

Try a broccoli rice casserole. You can find several recipes on the internet. I made one for my office potluck last week and it was pretty easy. Cook instant rice and frozen chopped broccoli according to package directions. Melt Velveeta cheese with Cream of Mushroom and Cream of Chicken Soups and some water. Mix all ingredients together and bake in oven till golden brown.

I just left out the onion and celery and it was great.
