What is your favorite filling to go with a yellow cake? I don't have time to make anything, so I need something I can purchase. I have used pudding in the past and preserves, but that was always with a chocolate cake. I could do the same with a yellow cake, but I thought that you guys might have a better idea. This is for a baby shower and my SIL doesn't care what I do. She is just thrilled that I am making and decorating her a cake.

So What Happened?

Gretchen K - that is exactly what I did.

I went with a buttercream frosting layer. It was delicious if I may say so myself. Everyone loved it. The chocolate cupcakes were also a hit for the chocolate lovers.

Why does cake have to have a filling? What happened to the days of a two-layer with yummy frosting in between? Or a single-layer cake artfully decorated?

I say this in humorous truth, but I HATE biting into a cake that has some gross jelly-consistence filling :)

I like lemon curd (the name is gross but it tastes delicious). Then make a whipped cream frosting for the top...not too sweet. You can decorate with thinly sliced lemon on the top of the cake.

I like something fruity with yellow cake. Lemon or lime curd is smooth and creamy and you an just buy it by the jar. I normally do fresh sliced strawberries (you can use frozen too) in a cooked filling of cornstarch, water (syrup from the bag if you use frozen fruit), sugar and lemon juice. It really is fast and easy and stands up well. Wilton has a recipe.

Try using her favorite ice cream flavor. Just let it get to where you can smooth it over then put it in the freezer to set back up.

Lemon is always a great idea or bananas go great with a yellow cake. You can still use Chocolate Frosting too.

I am loving the lemon curd and whipped cream idea and you can purchase both of those items pre-made. I know I have seen jars of lemon curd in the baking aisle.
While that is what I would personally pick, if you want to go with an autumn flavor, you could do apple pie filling and then the topping could be a caramel frosting.
