What to Do with Fresh Mushrooms for Dinner Tonight?

Menu so far: Grilled chicken, steamed potatoes with collard greens, tomato and cucumber salad

I have about a pound of fresh button mushrooms and I have no idea what to do with them? Ideas? I am thinking of some kind of sauce or topper for the chicken? Recipes please...I never cook with mushrooms...THanks!

So What Happened?

WOW thank you for the advice! Ya'll sound like good home cooks....my husband decided to slice an onion and the mushrooms, season with onion powder, garlic salt, pepper and wrapped everthing in foil with half a stick of butter, then he put it on the grill with the chicken. I will be making some kind of white wine/butter/cream sauce the next time I have mushrooms though :) THanks!

Sauteed sliced mushrooms would make a good topper or sauce for the chicken. Slice the mushrooms, melt butter and/or olive oil in a skillet. Saute the mushrooms. You can include minced garlic by first sauteing minced/crushed garlic in the oil before adding the mushrooms. You can also add any herbs that you like.

Google chicken with mushrooms and you'll find several recipes.

I love mushrooms, I eat them just plain or in a salad. I have also sauteed them in butter with fresh garlic and put them on chicken. You can also add a little white wine to the butter.....so yummy. I stuff them with breadcrumbs. look up a recipe for stuffed mushrooms and pick what you might like. I used them a lot!

sauteed and placed over the chicken...i saute in butter and Worcestershire sauce and onion powder...to taste...

I don't do collard greens (yuck in my opinion)...I would have a fresh spinach salad as spinach and mushrooms are AWESOME!!! together!!!

I love tomato and cucumber salad - what time is dinner? Will I be able to make it in time??? oh wait!! am I even invited? :)

I would slice them up and add them to the collard greens in the last 5 minutes of cooking.
Or top the chicken. I'm thinking sautte in a screaming hot skillet with olive oil, garlic, salt and pepper just enough to begin to soften. Remove the mushrooms and add white wine to deglace the pan. Let it simmer until it reduces and thickens a bit. Add the moshrooms back to the pan and cook until shrooms are done. Now you have a fancy Mushroom White Wine Reduction sauce.

The simplest thing would be to saute in butter until tender. You could add garlic, onions and whatever fresh herbs you have on hand. Or make a roux with butter and flour and turn it into a bechamel (adding cream), gravy (add chicken stock), or cheese sauce (add cheese and milk or cream). If you are doing the sauces or gravy make them first then add the sauteed mushrooms. Enjoy!

An easy fast recipe is stuffed mushrooms. OneandDone has a good recipe on her post for that.

I also do sauteed mushrooms and tomatoes.

I don't folllow recipes to the tee... I use them as a general guide and make use spices, etc we like.

1 1/2 # mushrooms quartered (with buttons you choose if your slice)
2 T chopped onion
2 cloves garlic
4 T butter
2T olive oil
4 tomatoes peeled, wedged ( I don't peel)
1 1/2 t salt
1/4 t pepper
1t sugar
1/4-1/2 t marjoram

Saute mushrooms with onion and garlic in the butter and oil for about 10 minutes. Add tomatoes, Stir in salt, pepper, sugar, marjoram. Cook uncovered until liquid is evaporated.

I use this as a side dish with steak, fish or chicken. Sometimes a main dish over rice or noodles

grilled chicken Marsala mmmm... The recipe for the sauce would be on a bottle of marsala cooking wine if you have time to run to the store.

The sauce ideas for the mushrooms are good. It sounds like you have a lot going on for dinner but if you really want to make a great sauce go to allrecipes.com and look for the easiest white wine lemon butter sauce and make that. It's to die for. A restaurant around here also adds broccoli and shredded provel cheese to it and it is fantastic.
