What Is Something Easy to Make for a Potluck?

My workplace is having a potluck lunch on Friday. I love potlucks, but I always have a hard time knowing what to bring... (I am not a good cook). What are some easy ideas that lots of people will like? My oven is broken, so I can't use that, but I am willing to use a crock pot if needed. What are some of your potluck favorites? Thanks!!!

Love the meatballs in the crockpot. Just put a bag of frozen meatballs in the crockpot, add 1 jar grape jelly and 1 jar chili sauce (with the ketchup and mustards - I think it's Heinz brand). Mix all together, heat in crockpot. Some other great ones we've had have also been a green salad with toppings & dressings. Chips & rotel cheese dip, chips & 7 layer dip. If I think of anything else I'll let you know.

7-layer taco dip, with tortilla chips. No baking, no cooking.

There are a couple of versions, but we like this one as a starting point, and you can tweak it if you want to:

Taco Joe Dip

1 can (16 onces) kidney beans, drained rinsed
1 can (15 1/4 onces) whole kernal corn, drained
1 can (15 onces) black beans, rdrained rinsed
1 can (14 1/2 onces) stewed tomatoes
1 can (8 onces) tomnato sauce
1 can (4 onces) chopped green chilies, drained
1 envelope taco seasoning
1/2 cup chopped onion (I use red)

Combine all in crock pot cook on low for 5-7 hours, makes 7 cups. Serve with tortilla chips.

This is very yummy and always was a hit when I brought into work.

Addition: I had a potluck today, we usually have a lot of food, so I brought in baked oatmeal made overnight in the crockpot - wonderful!!

My last potluck I did baked potatoes . . . I wrapped small potatoes in tin foil and put them in the crock pot overnight. I brought in a steamer bag of broccoli (threw it in the micro at work), sour cream, butter, salt, pepper and cheese. It was it a huge hit!!

Want something REALLY easy? Just pick up a package or two of frozen meatballs & put them in the crockpot with a can or two of tomato sauce. Always good, and very simple.

7 layer dip and taco chips is a fav of mine. Also, crockpot chili is pretty fast (to prepare) and easy.

Here are a couple ideas...and OOOO soo yummy!!

Bacon Cheese Puffs

Filling
8 oz pkg cream cheese, softened
2Tsour cream
4 oz can mushrooms, drained and chopped
1 green onion, chopped
4 oz real bacon bits
garlic powder
season salt

base
8 oz can refrigerated crescent rolls

Heat oven to 375 degrees. In a small bowl, combine all filling ingredients, mix well. Seperate crescent rolls into 4 rectangles, firmly press perforations to seal. Cut in half lengthwise, then crosswise to make 10 small squares. Spoon a small amount of cheese mixture into each square, seal tightly around filling to make balls. place on greased cookie sheet and bake 10-13 minutes or until lightly browned. makes 40 APPETIZERS.

Here is a crock pot side dish that is awesome!!

Slow Cooker Mushrooms

"3 to 4 lbs mushrooms, 1/2 c italian dressing, dash of oregano,5 shakes worcestershire sauce, 1 c butter, 1 envelope Italian salad dressing mix, 5 dashes italian sseasoning, 3 TBLE chicken bouillon granules, dash of onion powder, grated parmesan cheese to taste. Place all in a slow cooker and set on low for 6 hours. (I would suggest putting butter at bottom so they will melt quicker)

Here is one of my favorites.
Chili Bean Dip:
1 lb hamburger, browned and drained
1 (30 oz) can refried beans
2 (12 oz) cans bean and bacon soup
1 (10 oz) can Ro-Tel tomatoes
1/2 lb. grated cheddar cheese
12 chopped green olives

Place all ingredients in a crockpot and heat thoroughly. Serve with tortilla chips. This is also good served as a bowl of chili. It's hearty and men love this.

Buy a large can of nacho cheese sauce and bring tortilla chips.

Fill up the crock pot with chili.

Get chicken leg 1/4's and cut the leg off. Fill the crock pot with the legs and thighs, and add chili seasoning and water and cook.

Make pulled pork. Place a pork roast in the crock pot with BBQ spices and water. When the pork is thoroughly cooked, pull it apart and remove the bones. Place buns on the side. 6 ponds of pork roast, 1.5 teaspoons smoked paprika, 2 teaspoons black pepper, 1 teaspoon cayenne pepper, 1 teaspoon thyme, 1 to 2 teaspoons garlic granuals (not garlic salt), 1 cup water. Mix all the dry ingredients and rub evenly over the roast, place in the crock pot for 5 hours on low and place a cloth hand towel on the lid, but don't let it fall over the side. Use a fork to pull the pork off the roast and discard the bones. Place the meat back in the crock pot on warm and serve.

I know you said potluck fave but here's another thing that I always bring to potlucks and it is a HIT every time. Sounds a little strange but I assure you it is fantastic and super simple!

1 jar of raspberry chipotle sauce
1 package cream cheese

Put cream cheese in shallow bowl. Pour sauce over the top. Microwave until cream cheese is softened (45-90 seconds depending on mic).

Serve with Wheat Thins or other thin cracker of choice.

Lots of time I will just bring a fruit or veggie tray with dip. You still have to put in some time of prep so it's not really no effort, but you don't have to do any cooking. It is also appreciated by any vegetarians that may be attending since a lot of potluck dishes include meat. Also dieters will be glad they have something nutritious to pick from.

This is SUPER easy. Brown up 1 lb. ground hamberger or ground turkey, Drain the grease. Put the cooked meat into a crock pot add 1 can of cheddar cheese soup, a can of nacho cheese soup, pour in 16oz salsa or picante sauce.If you want it a bit hotter just add Jalepenos or have them available on the side. Stir completely. Heat and eat with corn chips, vegeys, etc. I have made this for the past 20 years or more. It is a family favorite and requested potluck item.

I would NOT do the mac and cheese with hot dogs. I've seen it at potlucks and it's still there when they are over! Just not appealing. Get a couple boxes of Bacon Ranch Suddenly Salad (or the ones at the Dollar Store). Make according to box but add shredded carrots, chopped tomato and chopped black olives, real immitation bacon. I have had TONS of people want the recipe when I make this for potlucks and parties, Good luck!

My mom always did a couple packages of Kraft Mac and Cheese and cut up hotdogs in it...super simple and it's a real hit with kids. Even most picky eaters will eat it. You can also do ground beef instead of hotdogs. Pretty much any pasta will generally go over well.

As someone else mentioned the grape jelly meatballs in the crock pot is awesome and easy (google for a recipe - make sure it calls for 'chili sauce', which is usually found near the salad dressings). I buy the Costco meatballs already made to make it even easier.

Deviled eggs are also usually a hit at a party. You can experiment with different types. I had some w/jalepeno in them that were super yummy.

Crockpot recipe: throw in cubed pieces of beef and a large jar of mild salsa. Set it on low before you go to bed and take in the morning. Serve with tortillas.

Except you will smell this cooking ALL night. Might be hard to sleep if your bedroom is close to the kitchen. Or plug it in on a porch or in the garage.

little smokies and bbq sauce is always yummy, as are meatballs w/teriyaki as far as crockpot goes. Velveeta w/rotel is always a hit, and a yummy variation is velveeta w/cream cheese and a can of stokes green chili.

Meatballs with the grape jelly and chili or BBQ sauce is awesome. I used to work with a gal who brought this all the time. She said her husband bought her a second crock pot so she would make him some the days he brought it to the office. GL!

I had one co worker that always brought a bucket of Kentucky Fried Chicken and it was always eaten.... so if you want super easy that would be the one ;)
