So I'm making out my grocery list for tomorrow & trying to plan my family's Easter dinner. So far my menu is the typical ham, green bean casserole, & since my family said they are tired of mashed potatoes I'm making a crock pot cheddar cheese hash brown recipe they love. I'm looking for some new ideas, though! Help, please :)

So What Happened?

Recipe for Ziggy and anyone else..super easy & super good!

2 pound bag of frozen hash brown potatoes
2 cans of cheddar cheese soup
1 can evaporated milk
salt & pepper to taste
1 can French fried onion rings
Put all ingredients in crock pot, periodically stir. 4 hours on high OR 6-7 hours on low.

My dinner consists of things we love.

I have a Honeybaked ham.
I'm baking sweet potatoes.
Grilling corn on the cob in the shuck which is to die for!!
Baked beans
Caprese salad
I am boiling a dozen eggs that
we will dye together.

I'll have other stuff. It's just hubby daughter and myself so we'll wing it and have fun.

I have daughters Easter basket ready with her favorite Godiva and a few treats plus eggs stashed with cash.

Tomorrow is the sorority formal and daughter is social chair so it's her hugest big deal so we will be winding down and looking forward to final exams in early May!!

It will be a relaxing day for us as a famly!!

For the first time ever we are going out to a restaurant. For years and years everyone came to my house - more than 25 people. But since there have been a few deaths in the family, my daughter's far away at college, my sisters have their own grandbabies and other siblings now go to their in-laws families there are just 7 of us and neither my sister or I feels like going crazy cooking. So we are going to a catering hall on the water that's having an Easter brunch - we're going to the last seating at 2:30. The buffet menu includes ham, leg of lamb, beef, salmon, and more. Everyone's happy and for what it would cost us to buy all this stuff and do all the cooking and cleaning or for my sister to do it we each spend $40 per person ($120 for us, $160 for my sister) and someone else cooks and cleans. All the mimosas and bloody marys we could want while enjoying the atmosphere. Now I understand why people go out to eat on holidays.

But back to your menu - asparagus with butter and dill, roasted veggies red bell peppers, zucchini, oninon slices brushed with olive oil, salt and pepper and put inthe oven, have you thought of stuff baked potatoes? OR sliced and spiced baked potatos? (slice each potato almost all the way though but not quite. Brush with olive oil, sprinkle salt, pepper, onion powder, garlic powder and bake. In the last 10 mintues sprinkle shredded chedder or mozzerella cheese.) Rice pilaf, layered salad (working from bottom of clear glass dish - layer each of red bell pepper peices, then cucumber silces that have been cut into half circles,layer of ranch dressing, layer of butter lettuce, layer of vidalia onions, layer of green peas (defrosted frozen peas), layer of ranch dressing, layer of tomatos, layer of roasted nuts or chees of some type. You make the layers as thick or thin as desired, you add or take away the layers that you want, all the pieces have to been serving spoon sized. Appetizer options: grilled lamb chops (pricy but a favorite at our house), pumpkin soup, guacamole, salsa & chips, crudites, stuffed mushrooms, devilied eggs (to use all the hard boiled eggs that didn't come out great), etc.

It's just the 4 of us. No traveling and no guests.

My oldest son's high school was doing a fund raiser with Honey Baked Ham and I bought EVERYTHING - ham, potatoes au gratin, cranberry orange mix, rolls, through them.

Only thing I will "do" myself? Deviled Eggs after we do our egg hunt.

boil up cauliflower and carrots and cool off ....then add Greek dressing! from a bottle (am I allowed to say what kind?) or sometimes we put in with some Jalepeno's from a can but not too much liquid if your crowd can't handle the hotness.

oh my goodness your hash brown recipe sounds awesome and I am sooo making that. :)
As far as the rest of the menu....whatever my parents are cooking is fine with me. Eating at their home is never a disappointment. Happy Easter!

My dad and mom are bringing over a ham, rolls, and some brown gravy.

We are making:
mashed potatoes
has brown casserole
broccoli casserole
macaroni and cheese
a huge veggie tray with dips
and dessert.

My 11 year old is a master baker (in my opinion) and she is going to make whatever she decides for Sunday.

Ham, potato salad, baked ziti, stuffed bread, garlic green beans, green bean casserole, rolls, broccoli, another veggie yet to be determined, and assorted goodies brought by my niece, daughter, and sister in law.

We're looking at dinner for 18 adults and 6 children so it'll be a houseful but fun. Love having friends and family around. The only problem will be the Easter egg hunt because a lot of the yard is mucky and some still covered in snow from the never ending winter.

No help from me. If my mom isn't working we are going to her house. If she is working, I think we'll just go to Taco Bell after church. lol Although I have a suggestion that is fun for Easter...google "pink stuff". It's a fruit/jello/marshmallow salad. It's pink or green or orange or whatever color jello you decide to use. Adds some color. Good luck!

Easter dinner? Lmao!
We got married last week, and spent most of the day yesterday moving large appliances from my house to his in the pouring rain. Dinner was a bacon wrapped pizza from Little Caesars washed down with several beers.
