Transportable Breakfast for Mom

hi Moms - I'm starting a new job on monday and will be taking public transportation. I believe in eating a healthy breakfast, but do NOT want to spend prep time in the morning. I have to get up very early and am going to do my personal and food prep the night before so I can just get dressed and get me and my kiddo out the door.

Do you have any suggestions for portable breakfasts, outside of the breakfast bar type stuff? How well would an omlette keep if I made it into like a egg wrap? Thanks for your suggestions.

For breakfast, I'm really into what I call "peasant fare". It's just very simple food that is easy to transport and doesn't require a lot of preparation. It usually consists of a starch, a protien and a fruit. For example, my typical breakfast maybe:

couple of pieces of toast
string cheese
tangerine

or

granola bar
hard boiled egg
apple slices

or

bagel
smoked salmon
grape tomatoes

or

toast
peanut butter
banana

This is just works for me.

I do yogurt, cereal and fruit in the morning. Use a crunchy cereal like grape nuts, fiber one, or bran nuts. All crunchy slightly sweet and won't go soggy in the yogurt.
Doesn't take me 2 minutes in the morning. 1/2 cup of cereal, handful of berries (i usually used frozen mixed) and a container of yogurt. Throw it all into a plastic container and go.

I do a protein shake. Quick, easy, no mess but if you have to eat something like my husband, egg wraps are great. Sunday night he makes a weeks worth and freezes them. Depends what you like in it but we usually do scrambled eggs or egg whites, ham, turkey, or turkey sausage, on a whole wheat low carb wrap. Sometimes he puts cheese or peppers in it too. Wraps it in foil and freezes it. Hope that helps.

I think your best bet would be breakfast sandwiches and wraps. The omelet would be fine the next day in the wrap or sandwich. You can also prepare sandwiches with cheese and/or lunch meat. Bagels and cream cheese is another option. Hummus is an alternative to cream cheese in sandwiches and wraps for a change. You can also buy spinach filled or plain croissants, muffins, other pastry. You can add in a banana or apple with the pastry for a healthier breakfast.

Mine are:
PB & J or PB and Banana sandwiches
1/2 apple slathered with PB
Lara Bar
Handful of mixed nuts/dried fruits
Cheese (Tillamook is a fav) with crackers
Chobani Greek Yogurt and crackers or fruit

I keep fruit, yogurt, dry creal, and oatmeal at the office. But I sometimes send my husband with an egg sandwhich - english muffin with a sausage patty, cheese and egg or sausage, egg and cheese taquito. I hand the kids string cheese, banana, or toaster waffle when on the go.

i make waffles, pigs n a blanket (little sausages wrapped in a pancake), homemade pop tarts, sausage & eggs wrapped in phyllo dough (like an eggroll)...i make this stuff on the weekends & freeze it then pop it into the toaster oven for my husband to take with him while he drives to work.

for pigs-n-a-blanket cook the sausages & then pour out silver dollar pancakes then before turning place your sausage on the edge & roll it, then finish cooking with the seam down (wait until the top is very bubbly before turning)

for phyllo dough layer 6 pieces (like directions) then cut in half (makes 2) put egg/sausage filling in edge then roll & fold in edges like an egg roll, cook until light brown then cool completely & freeze

you can also get those frozen sausage patties & brown them then refreeze & just warm up

you can make omlettes or egg patties & freeze then warm up & put on a tortilla or a sandwich

of course these are just for hot breakfast (which we do every other day or so) then on the other days, its yogurt & fruit (sometimes with graham crackers), or bagel thins (taste like a bagel but with much less bread & whole grain) with cream cheese,

you can cut fresh fruit & then freeze into individual containers (there are some that are fruit cup size) then just put into fridge the night before, & eat with gronola

What about a Hot Pocket? You'd just have to heat it up before you left.

Or bagels? Sometimes I toast one in the morning & put cream cheese on it & eat it while I'm driving lol Or if you liked them plain & not toasted, it would be an easy thing to grab!

Maybe an egg salad sandwich (or other type sandwich) you could fix the night before & grab in the morning.
