I recommend Infant Swimming Resource. Here's the website - http://www.infantswim.com/home.html - You can search by your zip code and find a private instructor in your area. I've taken my daughter to the same lady since she was 1 (she's almost 5 now). We actually go back next week for her refresher courses.

Any ISR or safe start program will give you one on one instruction and teach your child how to swim and drowning prevention. Many ISR trainers will come to you and most of the YMCAs in the area do Safe Start (you don't have to be a member to participate.) It's nothing like their regular swim classes and follows the same guidelines as ISR.
I recently did safe start and the Crosby YMCA in Winter park with my son and it was amazing. I liked the fact that there was an indoor pool there so weather was not an issue. I will continue to bring him back for refreshers. Many other moms I know have done ISR and they all feel the same about the quality and importance of doing the training.
Here's a link to the YMCA's safe start information:

I was going to recommend Sharks and Minnows also. My 11 month old daughter just finished taking her first session of lessons last month with them. They were really good, they have a couple different locations available around the UCF/Waterford Area. They also had different sessions available...Group (3-5 kids), Group Private (2-3 kids), and Private (1 on 1). We did the Group Private and it was only my daughter and 1 other kid, so it was nice to have the company but still some 1 on 1 with the instructor! Good luck!
