My MIL brought me a butternut squash from her garden. I've never eaten squash before so I have no idea how to cook it. Anyone know of some good recipes?

wash it.
cut it in half.
take out the seeds.
(you can then cut it up into smaller chunks if you want)
brush honey on it.
Put butter on it.
Put it in a foil lined baking sheet, cut sides up.
Put it in the oven at 350 degrees.
Bake it until it is soft when poked with a fork.
You can sprinkle salt on it if you want.
SUPER EASY.
That is the best part.
And tastes REAL good.

you can then eat it, skin and all.
The skin is very healthy and full of fiber.
The ENTIRE squash is healthy and full of fiber.
Oh and my entire family, including the kids like it!

oooooh, butternut squash is awesome, peel it like you would a potato, dice it up, and slow bake it in brown sugar and butter, youd think you died and went to heaven.

squash also lends itself well into soup, inside raviolies, sliced thin and added to a burger, breaded and fried, tossed into peppery stir fries and is really good on pizza with fresh sage and mozz cheese.

Our family has always done this and we love it:

Wash it and cut off stem if there is one
Cut in half length wise
Scrape out the seeds
Put it face down on a jelly roll sheet (any shallow baking pan will do)
Put enough water in the pan just to cover the edges
Bake at 35 until tender when poked with fork (usually around 45 minutes)
Face up on plate, butter it and sprinkle with brown sugar

This is a great soup. After chopping everything, it's really easy. Make sure you have a good peeler for the butternut squash, though, like one of the tiny but effective Swiss ones from Williams-Sonoma.

Well I'm not sure what the different squash types are but my g-friend makes this totally awesome yellow squash/corn casserole type dish but I'm sure any squash will work. Using a baking dish either w/lid or cover w/foil, take one or two squash, cut in thin slices & layer in dish. Add one can of cream style corn, two cans of whole kernal corn, one can of cream of chicken soup, and one or two boxes of jiffy cornbread mix (or you can mix your own cornbread batter), shredded chedder cheese, spread mixture evenly & sprinkle parmesean cheese on top & bake about 30-40 min til squash is tender to cut w/fork but not overly 'soggy'. Best served w/boneless chicken. YUMMM! Hope this helps!

You can roast it any of the ways below, and then the way we like it is to take a pizza crust, spread some boursin cheese on it, and top it with the roasted squash (I normally slice it, put pureeing would work as well). then add a little more parmesean cheese. It's not a normal pizza, but man, is it delish!

Butternut squash purée! I've had this at 2 different upscale restaurants, once with halibut and then with sea scallops. It was so delicious! Yum! It would even be good as a baby food. Here is the food network recipe I've been meaning to try:
(maybe I would use a little less butter, it kinda sounds like a lot)

Ingredients
2 butternut squash (about 1 pound each)
4 tablespoons softened butter, divided
Salt and pepper, to taste
1 orange, zested
3 tablespoons orange blossom honey
Pinch ground cinnamon
Directions
Halve the squash lengthwise and remove the seeds and strings. Rub the insides with 2 tablespoons softened butter; season with salt and pepper. Place on a roasting pan, skin side down. Bake in a preheated 350 degree oven for 30 to 40 minutes or until fork tender. Remove the squash from the oven, scoop out the flesh and place in a food processor. Add the orange zest, honey and remaining 2 tablespoons of butter. Puree until smooth. Add a pinch of salt and cinnamon. Pulse a few times to incorporate.

For regular yellow squash, I like to cut it in about 1/2 inch circular slices. Put a little bit of olive oil in a pan on med-high heat. Add the squash, garlic, salt and pepper. Stir occasionally just until the edges become a light golden brown and the centers are no longer opaque. Add a spoonful of butter and stir.

Very good!

For acorn squash, it's good with a hint of cinnamon and butter and butternut is yummy blended into a hearty soup. Butternut squash can be baked, roasted, mashed, grilled, and even used like a pasta in low carb lasagnas. Some good recipes here:
