Anyone have a favorite recipe for spiced cider that does NOT include adding sugar? I made some last year but it was way too sweet for my taste (I'm definitely an unsweetened tea kind of gal!).

I never add sugar to mine. I just heat it up with a couple of cinnamon sticks, 4-5 cloves, 2-3 allspice berries, a slice or two of orange or tangerine, and a dash of nutmeg. If you add a dash of salt, it makes it sweeter because salt masks bitter and bitter masks sweet. Of course, I prefer mine with rum, too!

You can do what ever you want really.
I have a cider / wassle that I make a few times each winter.
I put 1 quart cider into my crockpot and set it to simmer.
I add about 2 sticks of cinnamon, and about 6 to 8 whole cloves (I put them in a tea ball so they can't be scooped into anyone's cup).
I don't like mine to be overly spiced.
Add 2 - 3 teaspoons of frozen orange juice concentrate.
I like to peel a few Clementines and throw in the orange sections.
I will also wash a whole lemon, then slice it into pretty, thin slices (pick out the seeds) and float these in the cider.
Let it simmer till it's steamy, then have a mug of it when ever you want.
You can let this simmer all day - the spices will get stronger the longer it cooks.
When it's strong enough, I'll remove the cinnamon sticks and tea ball with the cloves and then it can simmer till it's all used up.
For variety you can pour some cranberry juice into it.
Cider will vary in sweetness depending on the type of apples being pressed so if it's not sweet enough you can add a little honey to taste (or let people adjust the sweetness in their own mug according to their taste).

Heat apple cider and then steep several bags of chai tea in it. Lovely, spicy, not sweet.

In a big pot I add
- cider
- cinnamon sticks
- clove
- pinch of ground ginger
- orange slices

Sometimes I'll add a pinch of garam masala

I just let it simmer all day and periodically add more coder to taste as it cooks down.
