Hi there. I am looking for slow cooker recipes that are inexpensive, healthy and easy to make. I leave for work at 5:30 am so I need recipes that I can throw together the night before. Thanks for all of your great sugestions!

I can not believe no one mentioned the book FIX-IT and FORGET-IT COOKBOOK. It is the BEST book ever for coming up with ideas for the slow cooker!! My mother in law bought it for me and it is the first thing I go to when I am stuck! I know I have seen it being sold at many places ... I don't think you should have any problems finding it! No expensive and very worth it!!!!!!!

Hi V., Here's one you can throw together in the morning...one bag of frozen chicken breasts (3lbs) one packet of Italian salad dressing mix and 1/2 cup of water. Spray the crock pot with non-stick cooking spray (if desired), put chicken in, add water, then sprinkle the dressing packet all over the chicken. Put the lid on the crock pot turn the temp on low and at the end of the day enjoy! Chicken is tender, juicy, and fall-apart done. You can serve it with any of your favorite sides from veggies and salads to mashed potatoes. Any leftover chicken can be used in chicken salad, or on a salad....or just re-heat in the mircowave! Check out www.recipematcher.com They have a great Crock Pot Lasagna, Chicken and Dumplings, Crockpot BBQ Chicken, a Morracan Couscous dish, and Chicken and Potatoes with Italian Dressing.

You can also try a really easy recipe for a Mexican Chicken. You just put 3-4 chicken breasts in the bottom of the slow cooker and cover that with a jar of salsa and set it to Low. When you get home shred the chicken with two forks and serve it in tortillas or hard taco shells with all the fixins. Super easy and yummy.
You could also do this with a jar of spaghetti sauce and then just boil up some pasta once you get home and serve with a side salad and garlic bread.

Chicken and dumplings is a good recipe...

4 - 6 chicken breasts
2 cans cream of chicken soup
4 tbsp butter/margarine
water
1 diced onion

Place chicken breasts, onion and cream of chicken soup in crock pot. Put 4 tbsp of butter over the top in pieces. Pour enough water to cover chicken.

Cook on low.

I take a container of Pillsbury biscuits and cook them in the oven and make rice and some sort of veggie on the side.

chicken noodle soup-chicken,water,3-4 bullions,carrots cut up,celery cut in small pieces,onion cut in small pieces,couple cloves of garlic.
can also make some spaghetti sauce,can of tomato sauce or puree from a can,can of tomato paste,can of stewed tomatoes,ground beef or turkey,of course brown the meat first,may be some sausage if you want some,may be some green pepper? italian seasoning. add a bay leave,put it on low and cook it all day. It comes out awesome.
another easy one- pulled pork-take a pork roast,put it in the crock pot, cover the meat with water,I add one chicken bullion, cook it on low. when you come home the pork with fall apart. get rid of the fat,put it in a bowel, add some barbeque sauce and put it on a hoagie roll. you could also put some cheese slices on top if you want.

Stuffed peppers are an easy slow cooker dinner. Just hollow out the pepper, stuff with uncooked rice and hamburger meat. Pour tomato sauce or spaghetti sauce over the peppers and let cook in slow cooker.

We also do ham and cabbage, just throw in a ham hock, diced cabbage, peeled and diced potato's, ham broth and slow cook.

Same for beef stew...throw in a beef butt, diced potato's, carrots and beef broth.

Check out the supermarket for great envelope seasonings for the crock pot. I just bought one for chicken and my husband and kids loved it. I have also tried McCormiks envelope mix for pulled pork and beef stroganoff and they too were good.

I like mine for pork chops but you could do chicken too.
I thaw the stuff ahead at least partailly, sprinkle some seasoning, like poultry seasoning or what ever, brown it in a pan, put onions carrots etc in the crockpot then toss in the meat cook on low with like half a cup of either chicken broth or apple juice. I'm sure you could find a real recipe but this is what i like.

I'd love a recipie for crock pot chicken noodle soup, if anyone has a good one.

My family loves a chicken recipe I make.
I put 6 boneless skinless chicken breasts in a crockpot. I combine 2 jars (12 oz ea) of apricot preserves with 1 envelope of onion soup mix and then spoon that over the chicken. Cook it on low. I serve it over rice and the kids love it!!

This is really good and super easy!!! Also has a few variations. These recipes have helped make my life easier along the way! They are not fancy but they taste like home to me and we love them and hope you do too!

4-6 frozen boneless chicken breasts
1 can cream of celery soup
1 can french onion soup
1 can cheddar cheese soup

mix soups together in crock pot (do not dilute)add chicken and cook on low for 8 hours or so.

Serve over rice.

This can also be made with a mexican flare....
1 can cream of chicken soup
1 can french onion soup
1 can nacho cheese soup

add chicken and cook for 8 hours or so. Serve with rice and top with salsa, sour cream and tortilla strips.

I have a pork recipe I use too....
6-8 thin sliced pork chops
3 medium potatos
1 small onion-sliced
1 can cream of mushroom soup
1 can french onion soup

slice potatos thin like scalloped potatos and lay in bottom of crock pot.
top with pork chops and cover with onions.
mix soups together in bowl and pour over chops.
cook on low for 8 hours.

Split Pea soup!
Prep Time: :

Cook Time: 8:

Ingredients:

1 (16 oz.) pkg. dried green split peas, rinsed
1 meaty hambone, 2 ham hocks, or 2 cups diced ham
3 carrots, peeled and sliced
1/2 cup chopped onion
2 ribs of celery plus leaves, chopped
1 or 2 cloves of garlic, minced
1 bay leaf
1/4 cup fresh parsley, chopped, or 2 teaspoons dried parsley flakes
1 tbsp. seasoned salt (or to taste)
1/2 tsp. fresh pepper
1 1/2 qts. hot water

Preparation:

Layer ingredients in slow cooker in the order given; pour in water. Do not stir ingredients. Cover and cook on HIGH 4 to 5 hours or on low 8 to 10 hours until peas are very soft and ham falls off bone. Remove bones and bay leaf. Mash peas to thicken more, if desired. Serve garnished with croutons. Freezes well.
Serves 8.
