My family loves stuffed bell peppers. We have creamed potatoes. cauliflower/cheese, and a green salad. sometimes we simply add a twice baked potato with green beans on the side.

Are you using rice in your stuffing for the peppers?

If so I would do a salad and maybe squash or green beans

If not you might try fetucinni alfredo and salad or squash, maybe sweet potatoes.

I'd do corn or potatoes. We learned that limiting the number of side dishes has helped keep us from eating too much. However, I want your recipe - that sounds really good! :)

Do you watch the cooking channels?
You can go to their web sites and you may find the help you want. If not check the library cooking books I am sure you will find something there.
If you would like to try something new, take some hot bread, spread good olive oil with salt and pepper. Then cut in small pieces. Or just slice the french bread in small slices, put in oven until crips and do the same with it.

Sinc eit;s fall out, I'd consider an autumn soup or squash dish. There are recipes for butternut squash soup with onions, etc., that would be fantastic (unless peppers are Mexican spiced?). The slightly sweet and savory taste of the soup would be a great complement to the peppers.
Other than that, I'd do crusty bread or rolls. BTW,
my husband and daughter love squash soup and they were the bigggest skeptics!

searches re: side dishes for_____. Some good & some bad results, but we have found some awesome dishes also.

Me personally, i think a dinner rice like the falvored rices that you can buy made by liptons may be good with it. I havven't ever tasted that particular dish so i really can't say exactly what would be good with it. If i would have tasted it before then i would be able to know what might go good with it. I really can't think of another side dish besides rice to go with it so that you culd make a 3-course meal out of it. Good luck!!! And enjoy dinner.
