Seeking Recipes for Nut and Egg Allergies

Hi. I'm going to be preparing some meals for a family with nut and egg allergies. They like to eat healthy, fresh meals, and it would be great to have something easy for them to heat up. Any suggestions for recipes is appreciated!

We have family with various allergies. Basically, cook with whole foods and avoid processed/canned foods and avoid spice blends (that's the rule of thumb for almost any food allergy.) A yummy squash soup would be lovely this time of year. Or chicken and rice soup. Chili and lasagna are great for heating up (make sure the noodles are egg-free).

This book has a lot of recipes and is organized nicely so you can see what they don't have in them (egg, wheat, etc.)

The Whole Foods Allergy Cookbook - Two hundred gourmet and homestyle recipes for the food allergic family.

When the recipe calls for egg, it often uses the EnerG Egg replacer as the substitute. This can be found at Whole Foods. It's like a powder that you mix with warm water to get the consistency of an egg.

My MIL gave it to us for our son who has food allergies.

Awesome you are doing this! My son has severe peanut, nut and sesame seed allergies. The other responses to your question sound great. I just want to add something that is very important for my son. Cross contamination could be deadly. Read the allergen warnings on all labels. Food that was "processed on machines or in a factory that also handles nuts/peanuts" is NOT SAFE. (or any statement similar to that one). Also be aware of this in your kitchen. Not that you'll be doing anything with peanut butter, but as an example...if we have peanut butter, we always use a different knife or spoon in the jelly. Rarely do we even have PB in the house, but if we do, we keep everything separate! Again, I think it is awesome you are looking into this stuff for your friend. Hi R.,

I'm a vegan (no eggs, etc.) and my husband has nut allergies, so I've been there (done that).

Check out www.vegweb.com or the Vegetarian Times Website -- www.vegetariantimes.com for some vegan recipes.

Good substitutes for eggs when baking include applesauce, mashed banana, soft/silken tofu, or ground flax seeds mixed with water. Ener-G brand also makes a powdered "Egg Replacer" (available at Whole Foods) that works pretty well, but things are maybe less moist than with some of the other substitutes. Feel free to contact me directly for exact equivalencies.
