We have sandwich night, and as of late, I've been doing BLTs, steak torte sandwiches, and burgers....I'd like some new ideas to add to the rotation. Since it's summer, we have salads with them -in winter we have soup....my go to salads are a southwest blackbean salad, fruit salad, spinach garbage salad.,a nd sometimes potato salad. I'd love some simple salad ideas too!

We also have tacos at least once a week, so we have a Mexican sandwich night too.

I personally love hummus in pocket breads with sliced cucumbers, tomatoes, green/red peppers, avocado, sliced olives... lots of options. Any other bean paste (white bean paste with fresh mint and lemon, for example) can be great too. Giving kids the option of assembling it themselves can be quite popular.

We are not sandwich eaters but my all time favorite is cheese and pickle on white with mayo. lol Not sure you all will like it tho. Pinterest has a list of really oooey and gooey different grilled cheese. YUMMO!

I do a seared mahi-mahi sandwich with tarter sauce and cabbage. You can get the mahi frozen at Trader Joe's.

Another winner is a portabella sandwich. Marinade in OO, balsamic, garlic and basil then broil. I put a slice of havarti, lettuce and avocado for those who like it.

Some salad ideas are greek orzo, smoked mozzarella penne (google the whole foods recipe) or homemade pesto with roasted cherry toms. Asian slaw is a hit as well as corn salad and wedge with homemade blue cheese dressing.

Gyros or souvlaki in a pita with Greek salad is my favourite sandwich and salad combo. Grilled cheese, Monte Cristo, Philly beef or Club. Pasta salad made with bow ties, red pepper, red onion, feta cheese and Italian dressing. Spinach with red onions, strawberries, almonds and poppy seed dressing. Broccoli, red onion, raisin and feta in yogurt dressing.

Sandwiches:
Rotisserie chicken slabs on sandwich rolls w/pesto spread & pepper jack
sliced cheese.
chicken wraps (chuncks of cooked chicken breasts, Ranch dressing as the
spread, shredded carrots & lettuce)
warm roast beef chunks on rolls w/mayo or warmed gravy
open faced pizza on sourdough rolls w/some red sauce, pepperoni, & mozz
cheese & pop in oven for 10 mins
tuna (mixed w/diced celery/onion, bit of mayo, tiny drop of mustard)
pita sandwiches (you can do meat or all veggie w/Ranch)
Salami sandwiches on mini Hawaiian rolls

Salads:
taco salad (cooked ground turkey or beef, mixed w/ice berg lettuce, diced
tomatoes & red onions, can of black beans drained, can of corn drained,
crushed Dorito chips, sm bottle of Thousand Island dressing)
spinach leaves, sliced almonds, sliced strawberries, raspberry salad
dressing
coleslaw
potato salad
bean salad (can of chickpeas drained, can of navy or red beans drained, can
of green beans drained, add a bit of Italian dressing)
mixed greens, sliced almonds, balsamic & olive oil dressing

Today for lunch we had wraps using leftover pork roast from last night's dinner and cheddar cheese. You can make wraps with a lot of types of leftovers.

I just accidentally discovered an easy way to jazz up tuna salad or chicken salad sandwiches. I like them both but the stuff always falls out. I was cutting some fresh red peppers (but you could use green as well or instead) into rings, and I put them on the bread, then I put the salad on top. The rings really held the salad in place around the edges. I put celery in my salads anyway, so they have a nice crunch along with the peppers adding even more. I'm sure you could do something similar with any fresh veggies that jump out at you at the farmers' market. Thin sliced sweet Vidalia onion rings would work too.
