Wow everyone, thank you SO much! I plan on using many of your suggestions!

For the one that asked, peas and cheese are just frozen peas (thawed) and cubed cheese. My kids love it, especially my very picky 18 month old daughter.

for a quick meal we do what my kids call biscut pizzas. Take a can of biscuts and grab a cookie sheet for each kid. Give the kids how ever many biscuts they will eat. Let them flatten them out on a cookie sheet. Then I take pizza sauce (I use Ragoo pizza sauce with the green lable). Then I let the kids put on the cheese and what ever toppings they want on them, pepperoni and black olives are the main things we use but you can use what ever you want. Then bake them in the oven at what ever temp the can of biscuts says to and for however long the can says or until the cheese is melted. This is one of my kids favorites because they make them.

One that we used to do was put a little piece of bologna or some braunschweiger on a Ritz cracker, then a little square of cheese then a dot or smiley face of mustard......make a big tray of these for a "picnic" in front of the TV maybe watching a Christmas special...serve with cups of apple sauce on the side, or apple wedges.
Celery stuffed with peanut butter...
Cut rounds out of bread, spread on peanut butter, make a face with raisins or dried cranberries...
For a sweet treat, use leftover frosting on Graham cracker rectangles and top with mini marshmallows or sprinkles or colored sugar...
Apple wedges or apples sliced crossways with peanut butter...yum

Ritz cracker sandwiches (make a mini sandwich out of Ritz - ham, cheese, turkey, etc).
Apples, grapes, and raisins mixed together with some little cheese slices and/or nuts ( I serve in a little cup)
Ants on a Log (celery, peanut butter and/or cream cheese and raisins)
Pretzel sticks with banana and apple slices cut small and placed on them (like a kabob) sprinkled with some cinamon
Grapes and cheese (and/or few crackers)
Mini bagels with cream cheese and tomato or peanut butter (or raisins, etc.)

I only did this once and it was a HUGE hit -- needed some supervision - Fishing snack - Mix soft cream cheese (either with food coloring or I used a little blueberry jelly) and put in a bowl. Cut celery sticks and put a bowl of fish crackers and/or raisins. The kids "dip" in the pond and "catch."
