Question About Baking

My daughter's party is this Saturday morning. I am going to make her a cake, cookies, cupcakes, and cake pops. I know that's a lot but its mostly to create a dessert table. Also making chocolate dipped marshmallows and pretzels. I will have help with my kids on Thrusday but I work Friday and will only have nap time to work in peace. Can I make any of these things on Thursday and freeze them, or would it be better to put them in the fridge till sat morning? I have the freezer space but not really the fridge space. Would it be better to just make these on Friday night? I would make the frosting on sat morning. I do not want the taste or texture to be affected. TIA

So What Happened?

I plan on making the frosting from real butter, does that change anything in terms of being able to sit out?

In my opinion, you can freeze most baked goods. I would definitely do that. Otherwise, you may be very overwhelmed. I would take the items out of the freezer the day or the night before.

You can make cake, cookies, cupcakes on Thursday, put in air tight containers and frost them Fri night.

No need to freeze anything, just put them in airtight containers. Unless you're using real cream cheese in the frosting or some kind of fresh fruit filling, you don't even need to refrigerate (refrigeration can change the texture of your baked goods and can be quite drying).

The cake pops will keep longest because they are so moist anyway (if you're doing the traditional cake/frosting mix) and are coated in chocolate or candy coating, which maintains freshness.

You can bake the cake a week in advance, wrap the layers in several layers of plastic wrap and freeze, then take them out and thaw for a few hours before you frost them. You want them fully thawed before frosting so that the moisture as they thaw doesn't do weird things to your frosting. You could bake the cupcakes ahead of time, wrap or bag those and freeze as well.

You could easily frost everything on Thursday and leave at room temperature in airtight containers and they'll still be fresh - even real buttercream frosting made with a bit of milk is fine at room temperature for a few days as the amount of sugar preserves the dairy.

If possible, I would do the cookies last because they can lose freshness quickly - you can make the dough in advance, scoop them onto cookie sheets (or cut them out) and then freeze them on the sheet, then pop into a freezer bag and bake the night before.

I would dip the marshmallows and pretzels on Friday if possible - if not, Thursday will be fine but make sure you seal the containers well.

You can easily do the marshmallows and pretzels in advance. I probably wouldn't put them in the fridge b/c the chocolate might sweat after it's cold and them room temperature so I'd just put them in tupperware or wrap in Press-n-Seal (I love that stuff!!). I think you could probably do the cake pops too. They will be sealed in by the frosting and not really exposed, so I think they'll be okay. If you're interested, I have heard of people using donut holes instead of cake to do the cake pops. Just an idea if you'd like to cut off some of your prep time. Just stick the stick in, dip it in whatever, decorate and done!

I think you can easily make the cake and cupcakes Friday. If you have time, frost them too. They can sit out overnight and still taste great the next day.

**ETA...no butter can sit out just fine. Butter does not need to be refrigerated, it just helps it last longer. It will be fine! I even let my cream cheese frosting sit out whilst atop a cake and no one has gotten sick yet!

I run a cake decorating business out of my house. I usually bake on Wed, dirty ice on thursday and then decorate Friday. There is no need to freeze your stuff if you cook it Thursday. You'll want to wrap it in saran wrap to keep it all moist.

You can make them all Thursday if you want and wrap in saran wrap or put in a tupperware. Don't freeze or fridge any of it, as either of those will dry everything out. Just leave on counter and since I see you are in TX like me, I would keep the temp at or below 75 in the house vs letting it creep up to 80s.

On another note, I am a pretty good baker but I failed at cake pops big time! Mine turned into a giant mess because I got them too moist and they wouldn't hold together. Also the frosting I tried to dip them in was too thick and it pulled at the cake pops. If I do it again, I will reduce the icing that goes into the cake mix by 1/2 and I will chill the cake pops before trying to ice them. Hopefully you know a better way to do it. I love the idea Tori H gave about using donut holes instead.

I always make my cakes/cupcakes ahead of time and freeze them. I even frost them with buttercream before I freeze them, and it doesn't affect the taste or texture. I take them out a couple of hours before the party. Most cookies are good for more than a few days in a container at room temperature. Refrigerating or freezing (most) cookies makes them taste stale and loose crispness.

I have had cakes that were frozen that tasted nasty. Like it picks up a meatish flavor from the freezer. Not knowing when I bite in that it was in the freezer till i taste it and ask. If you must freeze it I would put it in a tight sealed tubbaware or other product that wont let the other flavors touch the cake flavor!!!!

I would make as much as you can friday night. Are your kids old enough to help...is there neighborhood kid that would find it fun???

Pop them in the freezer. They will be fine. I freeze cake for months at a time, and no one ever knows!

1) if you use corn oil in the CAKES (sheet, cup, pops, too) instead of veggie oil, they'll keep neither frozen nor fridge.

2) all of them can be made ahead and frozen. Bring out the night before to defrost.

3) I wouldn't freeze cookies. Just airtight container

Anything baked can sit in the fridge for a few days. I wouldnt put it in the freezer.

Baked goods, even with frosting, will keep just fine on the counter. Real butter would make no difference. Cover with plastic wrap. Think about how often you don't finish eating a cake and keep eating on it for a few days.

Sugar is a perservative. yes you can make the cake pops thur. don't refrigerate they will not hold up well. freeze the cake and frost latter. Do you have a cake plate and cover? then do it thur. If not do it the morning of.
