It is summertime and really really hot if you haven't noticed. We are striving to keep our 3 bdrm 3rd floor apt cool but the ac runs all day and barely keeps it around 78 (it's set to kick off at 75). So to satisfy some craving in my home and keep it cool I was wondering if you lovely ladies could share your favorite NO BAKE DESSERT recipes. Thank you in advance.

I just made an icebox cake the other day (though mine wasn't quite as pretty as this one http://smittenkitchen.com/2007/01/wafer-wonderland/ ) and it was a hit. The cookies were in the baking section of my store; I had given up on trying to find them and was going to make something else, and there they were!

No bake cookies- you do have to boil, but no oven cooking:

1 stick butter
2 cups sugar
1/2 cup baking cocoa
1/2 cup milk
1/2 cup peanut butter
4 cups old fashioned oats

Bring butter, sugar, cocoa, and milk to a boil for 1 min. Remove from heat and quickly stir in peanut butter and oats. Drop heaping teaspoonfuls onto wax paper and let set. Enjoy!

No bake cheese cake: get a cracker crust pie shell, a packet of cream cheese, a can of sweetened condensed milk, a half tsp of vanilla and one lemon. Let the cheese come to room temp and cream it together with the condensed milk, vanilla and lemonjuice. Fill into your pie shell and refrigerate for at least 2 (better 4 hours). I like to put some diced strawberries in the bottom of the shell and on top but it's good either way.
Also good: mix leftover filling from above with equal amount of natural yoghurt and serve over berries for a "reduced guilt" dessert.

Frozen Fruit Slush
Dissolve 1 1/2 cups sugar in 4 cups luke warm water.
add
1 small can(6ounces) lemonaide concentrate
1 small can(6 ounces) orange juice concentrate
1 big can crushed pineapple, with juice
1 jar marachino cherries with juice (no stems)
1 large can mandarine orange segments DRAINED
Mix in a large bowl and freeze, stirring occasionally to keep it mixed.
***Some hints now..This is an old recipe and I used to get the small cans of juice concentrate but I dont see them in stores now so I get the bigger cans and let them thaw and measure what I need and then make juice with the rest to enjoy also. I like the bigger jar of cherries(about 1 1/2 cups worth) since my family loves how they taste frozen and they are sooo pretty in this dish. I usually make this in a clear glass bowl so you can see it on the sides. Its good to get out about 30 minutes before you want to serve it so it can thaw just enough to chunk out with a fork, or big spoon. (ok I use a dinner knife like an ice pick but wasnt going to suggest that for safety reasons) After I get it in the freezer I set the timer for an hour and go stir. The cherries settle to the bottom and every hour I go back and stir them up into the mix until about the 3rd or 4th hour when its slushy enough to hold them in place. Then it freezes solid. I would think if it gets really thick slushy you could scoop some out into paper cups or something to make individual servings and save the mess of the "ice pick knife trick". Ive always made this for a group of people so never did the paper cup thing but last week when it was just for my family I wish I had. Once it starts to thaw you can still put it back in the freezer tho, but I ended up with a nearly empty bowl taking up lots of space in my freezer when it would have been nicer to have it in a small bowl or 2.
Its amazingly cool and refreshing! Its yummy sweet, fruity.

This is one of our favorites:

Unwrap 9 ice cream sandwiches and place them in the bottom of a 9X13 pan. Pour either hot fudge or caramel topping over the ice cream sandwiches until covered. Then, add heath bar crunch topping as much as you want. Top with 8 oz of cool whip and sprinkle more heath bar crunch on top. Freeze and enjoy.

1 can condensed milk
1 can evaporated milk
1/2 cup of fresh squeezed lime juice (do not use fake/bottled/pre-anything or it will really not taste good)

Maria's cookies (they are a Mexican brand of cookies that you can find at any grocery store at the Mexican section)

Put a base of the cookies in a glass baking dish (we usually call them by brand name... so I am not sure of the name..... pyrex)

The 2 milks and the juice in a blender......pour the mix on top of the cookies.... then put it in the refrigerator for at least and hour.... ready! that simple... and is super good too.

Marias cookies are also super good just with a spoon of Cajeta... which is a type of milk caramel.... you can find it also at the grocery stores, I have seen it at Walmart.... the brand I like is called Coronado.

I get low fat vanilla yogurt and mash up whatever fruit i have on hand to mix in. Then put it into popsicle molds and freeze it. The kids love them because they are popsicles, I love them because they are healthy. If you don't have popsicle molds, small plastic party cups work also. just put plastic wrap over the top and poke a hole into it to hold the sticks.

1. Buy the little mini angel food cakes in the produce section in the supermarket and put strawberries and whipped cream on them. Or just sliced strawberries and vanilla frozen yogurt. Very delicious!
2. Sliced bananas and cut up oranges, mix in a bowl and let sit for an hour. Very sweet and yummy.
3. Jello pudding.
4. You can make a yummy ice cream cake just buy a premade graham cracker crust and put any flavor of ice cream you like into it.
5. Chocolate covered strawberries - very easy to make. And you can get exciting with them by dipping them into cookie crumbles or nuts or sprinkles...
6. You can make parfaits with layers of berries and whipped cream. We grow blackberries and raspberries in our yard so we've got TONS. Very yummy....

I want ice cream now! LOL!

And of course we make a lot of homemade juice pops. And we purchase a lot of juice pop.

Frozen Chocolate covd, banana slices.

Milk shakes we use no fat milk and lower fat content ice creams.

Frozen grapes.. Not for really young children may be a choking hazard.

Smores on a small grill or over a non scented candle or can of sterno.

Frozen marshmallows!

I have a yummy lemonade pie recipe!

1 Graham Cracker Pie Crust
Vanilla Ice Cream (Slightly Melting)
Thawed Lemonade Concentrate (from the frozen foods section)

I don't know the exact measurements, but I just start mixing the ice cream and lemonade together until it tastes like I want it to. Then pour it into the crust and freeze. Enjoy!!
