Need Simple Gluten-free and Milk-free Recipe Ideas

A few months ago I found out I am gluten-intolerant and allergic to milk. I've also been severely allergic to fish and shell fish all of my life. I have chronic fatigue and have changed my eating habits over the past 2 years to cut out all processed foods and sugar (have lost 65 pounds). I work full-time and have a busy schedule and I don't often have the energy or desire to cook so I need ideas about healthy gluten-free, milk-free meal ideas that are quick and easy to put together. My ideal solution would be to have my own personal cook but unfortunately my budget won't support that! I'm really struggling with this and any help would be appreciated.

I also have the problem with quick gluten-free recipes. My favorite is rice pasta with marinara sauce (1 can tomato paste, 1 can tomato sauce, 1 can mushroons, basil, oregano, garlic, and onion), you can add chicken or ground beef. It is easy, I never measure anything (less dish washing), and it usually lasts a couple meals. I can find the rice pasta at my local HEB (it is in the gluten-free section, not with the other pastas, go figure). I also like picking up a chicken and a veggie tray.
I don't know if you have tried any wheat-free breads. HEB also has wheat free bread, but it is in the international section (go figure) called FeldKamp. It is a German "bread" that keeps well, is better toasted, and will make a decent sandwich. They have a number of varieties too, which is nice. I'm afraid the rest of my recipes have either milk products or fish, sorry! I hope this little bit helps.

My mom has celac sprue (sp) and also allegic to milk - i also am allergic to milk and i thought i might have celac but i had the test and i don't - I feel so sorry for my mom (and you too) - BUT it is a VERY HEALTHY DIET - she is 86 and will probably out LIVE US ALL - but i am sorry - she has recipes but i don't - she lives near austin TX and i live near houston OR i would get you some - SHE MOSTLY goes to the HEALTH FOOD store for her SPECIAL FOODS!

Hey D.,
about 2 years ago I was also diagnosed as gluten intolerant with all the symptoms, as I did different detox's and followed a strict gluten free diet, I continued to fluctuate in my weight and have skin allergies and irritations,my nutritional counselor then did a saliva test as she thought that I had Candida,well sinse diagnosed with candida (parasites/bacterial yeast infection) which is really the root cause of all food allergies, I bought the book: "Complete Candida Yeast Guidebook, Revised 2nd Edition: Everything You Need to Know About Prevention, Treatment & Diet" and following a sugar free,dairy free diet (which is basically vegan),the book has tons of recipes and I am really enjoying experimenting and I have been on it for 3 weeks now and have not been hungry at all.A lot of the GF recipes which I normally get off the "glutenfreeclub.com" website usually has some dairy in it but you can always substitute it with 1)unsweetened almond milk,2)soy milk 3)rice milk or oat milk. Goat cheese is really popular and so is the soy cheese. I also drink kefir (goat milk)& buy the natural yogurt with Acidophillus powder in it.

Also my husband forund the most amazing gluten free restaurant and bakery in San Antonio,it is on Broadway and it's called The Aussie bakery. They make their own breads and it is delicious,the best GF bread Ihave ever had! They also serve sandwiches on the GF bread,they have lasagnes,soups,etc.

Hi D.,
A friend of mine's daughter is highly allergic to many foods and is also gluten intolerant. She uses the site www.glutenfreemall.com to purchase many different foods for her daughter. I also know that our local Kroger and HEB have wonderful Organic sections that carry numerous gluten-free foods. They also have organic gluten-free freezer foods that are good for lunches or one person dinners. I hope this helps a little bit and good luck to you! Try googling "gluten-free" and find an online support group for more tips and ideas!

take a loof at the book Digestive enzymes for autism and other neuro disorders by Karen De Felice. Great book.

Also do a seach for gluten/casein free and you will get overloaded with diet and idea for a dairy and whet free diet (my son has austims but this stuff is quite useful for anyone not on the sprectrum).

Hi D.,
At www.eatingwellbeingwell.net I blog about living gluten free, dairy free, and refined sugar free. I have quite a few recipes posted that are quick and simple, even my gluten free bread http://tinyurl.com/glutenfreebread doesn't take that much "hands on" time.
I use almond milk in most of my recipes that call for milk and because I am reactive to soy, I just don't use cheese.
